These easy to make brownies can be made with just one bowl! Delicious, fudgy brownies au nutella.
I am in a bad mood today. I went to bed in a bad mood, I woke up in a bad mood, AND it’s raining.
Sometimes I wish that when I’m in a bad mood I would think something other than, “I need chocolate,” but I don’t. I think about chocolate every stinking time.
And, given the mood I’m in, I have no resistance at all to those urges.
I also have no patience for complicated recipes and doing dishes and stuff like that. Give me something I can whip together in 5 minutes in one bowl and satisfy my cravings.
Otherwise, I’m left to raiding the cupboards, searching for leftover Easter candy.
Like an addict.
I should tell you right now that I am not one of those people who never uses box mixes. In fact, the brownies that come in the red box are kind of my favorite thing ever. And let’s face it, cake mixes make the softest, easiest, tastiest cookies.

But there are times when you just want to make them from scratch. Which is what I did today.
I could have left well enough alone, and just put the plain brownies in the oven, but it was a double-chocolate, triple-chocolate, quadruple-chocolate day.
So I softened some Nutella in the microwave, and swirled it into the batter. Frankly, I think it would be equally good with peanut butter or caramel.
These turned out super fudgy and delicious, just the way I like them. They’re not overly chocolatey, but had enough chocolate to quell my cravings for one afternoon.
And then the sun came out, and all was well.

Recipe adapted slightly from Picky Palate.
- ½ cup butter
- 4 oz. semi-sweet chocolate
- 1 teaspoon vanilla
- 1 cup sugar
- 2 eggs
- 2 tablespoons vegetable oil
- 1 cup flour
- 2 tablespoons Nutella (optional)
- Chop chocolate, and place chocolate and butter in a microwave safe bowl. Microwave in 30-second intervals, stirring between each, until mixture is mostly smooth and melted.
- Add vanilla and sugar and mix well.
- Add eggs and stir well. (Be sure chocolate mixture is not too hot when adding eggs, or the eggs will cook when they are stirred in.)
- Add flour and oil, and stir until combined.
- Pour mixture into a foil-lined 8x8 or 9x9 pan.
- OPTIONAL: Melt Nutella for 10-30 seconds in the microwave, and drizzle over brownie batter. Use a knife to swirl into batter.
- Bake brownies at 350F for 30-35 minutes, until edges are dry and pull away from the pan slightly. Let cool before cutting into squares.

Ok, sometimes I think that you and I are the same person. When I’m in a crappy mood, nothing can pull me out of it. And I DEFINITELY crave chocolate to take the edge off, especially when it comes in a form as delicious and quick to make as this. Good call on the Nutella. The only thing that makes chocolate better is more chocolate 😉

I used almond flour and coconut flour 50/50 instead of flour and coconut palm sugar instead of refined sugar. They turned out wonderful. Oh, and instead of all butter I used half coconut oil. Delicious!

Is there a way to substitute the chocolate bar with maybe cocoa powder? I don’t know where to get the chocolate bars. thank you 🙂
Marcy, chocolate bars for baking are pretty easy to find. They are usually in the baking aisle at the grocery store, near the chocolate chips. You can’t really substitute with cocoa powder straight across, but there is a way to do it. I would caution that this recipe already uses a lot of butter and oil, so you may not need quite as much as the substitution calls for. Also, this substitution may change the texture and flavor somewhat. Cocoa powder does not have as intense a chocolate flavor as a bar, and as you can see in the article, you will need A LOT of cocoa powder to make that substitution. (You would need 12 T. cocoa powder, which is equivalent to 3/4 cup.) If you do end up making them with the powder, please let me (and my readers) know how it turns out! I’m very curious. 😉

I was able to make these allergy friendly for myself by subbing in gluten free flour (plus 1/2 xanthan gum), canola oil and organic cane sugar. Still turned out fabulous!!!

How much would be 4oz chocolate in cups? Since all the rest of the ingredients mentioned are in cups…
This will be my 3rd try at making brownies, the other two times my batter wouldn’t cook in the oven.. 🙁

Gemma, I didn’t mention it in cups, because it’s difficult to measure accurately that way. I use a single 4 oz. chocolate bar (you can also use semi-sweet baking chocolate, such as the Bakers brand, which is also measured in ounces) and give it a rough chop. In a pinch, you could use chocolate chips, which would be about 1/3 of a 12-oz bag, but be aware that some brands of chocolate chips melt better than others. Hope that helps!
My second batch of requested brownies are in the oven. This recipe is great and enables you to let your imagination go. Make almond joy brownies: add coconut and almond extract, use any extract you like. Add orange extract and some orange zest. Put toffee bits or nuts on top. This recipe will hold up to many variations. Thank you very much for sharing it.
