My friend says all her actions fall into one of two categories: the math test or the good book.
The math test is stuff we have to do. The good book is something we want to do.
The problem with food blogging is that sometimes the stuff I love and enjoy doing turns into something I have to do. Stuff like social media, and writing, and of course, baking.
Today the sun came out, I woke up in a good mood, and it was time to bake something fun… just for fun.
Which doesn’t stop me from sharing it with you. Because, honestly? That’s my favorite part.
So here’s what I did. I made a super delicious dark chocolate sheet cake. It would have been enough by itself. I didn’t used to like dark chocolate, but these days I can’t get enough.
But I can’t leave well enough alone. Not me.
I found some cream cheese in the fridge just begging to be baked with, and I figured my chocolate cake would taste amazing with a little cheesecake on top.
I was right, by the way. Cheesecake and dark chocolate cake is a winning combination. Winning.

Twix Cheescake Bars |
- 10 T. butter, softened
- 1 cup sugar
- 2 eggs
- 1 tsp. vanilla
- ½ tsp. baking soda
- ¼ tsp. salt
- ½ cup dark cocoa powder
- ¾ cup boiling water
- ¾ cup milk
- 2 cups flour
- 12 T. cream cheese, softened
- 1 egg
- ⅓ cup sugar
- 1 tsp. vanilla
- ⅔ cup chocolate chips
- Cream butter and sugar. Add egg and vanilla and mix well.
- Add salt and soda. Mix well.
- In a small bowl, combine cocoa powder and boiling water. Add cocoa mixture to dough and mix well.
- Add milk and flour alternately. Mix until combined.
- Pour batter into a jelly roll pan, which has been greased or lined. Bake at 350F for about 15 minutes.
- Meanwhile, prepare cheesecake layer by mixing cream cheese, egg, and sugar until smooth. Mix in half of the chocolate chips.
- Pour cream cheese mixture over cake, spreading evenly. Sprinkle with remaining chips, then return to oven and bake for an additional 30 minutes.
- Let cool before cutting into bars.

I actually use a half sheet pan, which is approximately 13×18 inches. Hope that helps!
Oh it does of course… helps a lot i mean 🙂 One last question please, my pan seems to be 3/4 inches deep only. Will that work out for this? Thanks…
