Dark Chocolate Cheesecake Bars

A layer of dark chocolate cake topped with a layer of chocolate chip cheesecake.

Ingredients
CAKE:
  • 10 T. butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ½ cup dark cocoa powder
  • ¾ cup boiling water
  • ¾ cup milk
  • 2 cups flour
CHEESECAKE:
  • 12 T. cream cheese, softened
  • 1 egg
  • ⅓ cup sugar
  • 1 tsp. vanilla
  • ⅔ cup chocolate chips
Instructions
  1. Cream butter and sugar. Add egg and vanilla and mix well.
  2. Add salt and soda. Mix well.
  3. In a small bowl, combine cocoa powder and boiling water. Add cocoa mixture to dough and mix well.
  4. Add milk and flour alternately. Mix until combined.
  5. Pour batter into a jelly roll pan, which has been greased or lined. Bake at 350F for about 15 minutes.
  6. Meanwhile, prepare cheesecake layer by mixing cream cheese, egg, and sugar until smooth. Mix in half of the chocolate chips.
  7. Pour cream cheese mixture over cake, spreading evenly. Sprinkle with remaining chips, then return to oven and bake for an additional 30 minutes.
  8. Let cool before cutting into bars.
