Under normal circumstances, I try to limit the amount of baking chips I purchase. But, let’s be honest, you can’t expect a girl to just never buy chocolate chips, can you?
I found a clearance basket at my local grocery store that was full of Ghiradelli bittersweet chocolate chips. I’m not sure whether they were being discontinued or what, but they were going for $1 a bag.
I bought 5 bags. And regretted not buying more.
Having this much self control is exhausting. I’m pretty sure I deserve an award {or at least a reward} for all the money I didn’t spend last week. Check me out: I went to Hobby Lobby and spent less than $20. I went to World Market and spent less than $25. AND I went to IKEA and spent less than $30.
If you don’t include lunch. Which I don’t. Because that was a separate self-control win altogether. {Chocolate cake, anyone?!}
What is it exactly that makes granola bars seem healthy? Is it the oats? Or maybe the honey? Whatever it is, mine are triple healthy because they have oats, honey, AND yogurt.
Ta-da! A triple healthy, no bake, chocolate granola bar. Believe it, people. There is a God.
So now I can take a break from all that self-control. I can eat as many chocolate frosted sweet granola bars as I want. I’m calling this my reward for being so disciplined.
Someone tell my husband how amazing I am, would you?
- ¼ cup butter
- ¼ cup sugar
- ¼ cup honey
- ¼ cup peanut butter
- 1 cup rolled oats
- 1 cup quick oats
- 1 cup rice krispies cereal
- ¼ cup vanilla greek yogurt
- ½ bag chocolate chips (about 5-6 oz.)
- Melt butter, sugar, honey, and peanut butter together, stirring to combine.
- In a large bowl, combine oats and cereal. Pour butter mixture over, and toss to coat.
- Press mixture into a quarter sheet pan, pressing flat to get an even layer. Chill for 10-15 minutes before frosting.
- For frosting, melt chocolate chips* and add yogurt. Mix well.
- Frost cooled bars, then chill again. Cut into 18 pieces. Keep in refrigerator.

I love home made granola bars! I dont’ make granola (or bars) too often because I end up eating the entire pan in one sitting. This owuld be especially dangerous with all the added chocolate!

You can never have too many chocolate chips. I get worried when our supply dips under 3 or 4 pounds. 😉 Nice recipe – granola bars means this is totally healthy, right? 😉 Thanks for this.

You state to keep the bars in the fridge… is this because they are going to get mushy and fall apart?
I can keep the batch in the fridge but I imagine my hubby is going to keep the one bar he takes to work in his bag until 2 in the afternoon. How well will they hold up do you think?
Amie, I probably wouldn’t count on this recipe holding up to a lunchbox very well. Homemade bars in general tend to do better in the fridge, but you might try this recipe (peanut butter) http://www.jensfavoritecookies.com/2012/06/25/peanut-butter-chocolate-chip-granola-bars/ or this one (Biscoff) http://measuredbytheheart.com/2012/08/biscoff-granola-bars.html. These two might be a better bet. Good luck!
