Chocolate Yogurt Granola Bars

A recipe for a no-bake granola bar frosted with chocolate yogurt.

  • ¼ cup butter
  • ¼ cup sugar
  • ¼ cup honey
  • ¼ cup peanut butter
  • 1 cup rolled oats
  • 1 cup quick oats
  • 1 cup rice krispies cereal
  • ¼ cup vanilla greek yogurt
  • ½ bag chocolate chips (about 5-6 oz.)
  1. Melt butter, sugar, honey, and peanut butter together, stirring to combine.
  2. In a large bowl, combine oats and cereal. Pour butter mixture over, and toss to coat.
  3. Press mixture into a quarter sheet pan, pressing flat to get an even layer. Chill for 10-15 minutes before frosting.
  4. For frosting, melt chocolate chips* and add yogurt. Mix well.
  5. Frost cooled bars, then chill again. Cut into 18 pieces. Keep in refrigerator.
*I used Ghiradelli 60% cocao bittersweet chips, but feel free to use whatever chips you prefer. I think the milk chocolate chips would be great with this.
