This coffee cake has been my nemesis. Falling, melting, pitching a fit. It’s the most uncooperative cake I’ve worked on in a while.
I finally decided that coffee cake has a mind of it’s own, and it would never be as pretty, as picture-perfect, as I hoped.
I consoled myself with the fact that everyone’s slice chunk of cake disappeared in no time, and at least one family member went back for seconds. And thirds. And gushed about how delish it is.
I’m having a chunk right now, as a matter of fact. I’d tell you it helps me think, but honestly, the only thing I’m thinking about is crumb topping. And lots of it.

Pumpernickel Bagels |
- ½ cup butter
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- ⅔ cup sour cream
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 teaspoons cinnamon
- 2¼ cups flour
- ¼ cup butter
- 1 cup flour
- ¼ cup brown sugar
- Cream butter and sugars. Add eggs, sour cream, and vanilla, and mix well.
- Add soda, baking powder, salt, and cinnamon, and mix well.
- Add flour and mix until combined. Batter should be heavy.
- Pour into a 9x9 pan.
- To make crumb topping, mix butter, flour, and brown sugar. Use a fork to mix until crumbly. Pour topping over batter.
- Bake cake at 350F for 60-65 minutes. Let cool before slicing into 9-12 pieces.

Oh my gosh, I think this looks GREAT, Jen. I mean, as a fellow food photographer, I understand the struggle. But we really are our own worst critics, but I think this looks just the way real coffee cake should look – perfectly crumbly and imperfect.
Coffee cake is the best part of any brunch. And I’m just a tad obsessed with cinnamon, so this is just perfect
