Only when you think about, though.  When you taste the cookies with cookies in them, it doesn’t seem weird at all.

Why did I never think of this as a kid?  Putting cookies in the cookies… it’s brilliant!  My friends and I used to make cookies all the time, but we always made boring things like chocolate chip or oatmeal chocolate chip or chocolate chip with peanut butter chip.

We were super creative.

I had one friend that didn’t really like baking the cookies, just mixing them up.  Fortunately, her mom liked baking them but didn’t like mixing them up.  It was a match made in heaven.  We would mix up some cookie dough, head to the basement for an episode of Days of Our Lives, and the head back upstairs for warm cookies.

My kids and their friends needed both entertainment and sustenance, and as cookies are all the rage at our house, that’s how they spent their evening.  We had a box of Oreo Cookies & Cream instant pudding mix in the pantry, and 4 Oreos left in the package I was trying to save.  (as if)  Throw in some chocolate chips, and you’ve got yourself some fantastic cookies, my friends.

After I left the house, my kids discovered that the box of baking soda was gone.  They solved the problem by walking around the neighborhood, begging for baking soda.  The first four houses they went to were empty.

Either that, or the homeowners looked out the window, saw it was my kids at the door, and decided to pretend they were gone.

Don’t worry, neighbors.  I’m not judging.  I may have done the same thing myself.

After I heard this story, I walked to the pantry and pulled out not one, but two full boxes of baking soda.  It was rather a distressing moment for the kids.  I, for one, am glad they went wandering around the neighborhood in the freezing cold, because seriously?!  These cookies are so awesome.

Awe.  Some.

The texture?  Perfect.  A touch crispy, but still soft, perfect for dunking.  The taste?  Amazing.  The chocolate chips?  Just the right addition in just the right amount.  The size?  Far, far too small. Next time, I’m doubling the size of these.  Maybe that way I’ll eat half as many.

Cookies & Cream Pudding Cookies

A very easy cookie made with cookies & cream instant pudding mix.
Recipe type: cookies
Serves: 3 dozen
Ingredients
  • ¾ cup butter, softened
  • ¾ cup brown sugar
  • ¼ cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 (3 oz) box cookies & cream instant pudding mix
  • 1 tsp. baking soda
  • 2¼ cup flour
  • 1 cup chocolate chips
Instructions
  1. Cream butter and sugars together. Add eggs, vanilla, and pudding mix and mix well.
  2. Add baking soda and flour, and mix until combined.
  3. Add chocolate chips and mix just until incorporated.
  4. Drop by spoonfuls onto a baking sheet and bake at 350 degrees for 8-10 minutes.
