Date Nut No-Bake Cookies

{pause for effect}

This is the same kid who said, “Blogging is a nerdy woman thing to do.”

He’s not related to me, I swear.  He didn’t spring from my belly, grow up in my house, and throw countless purple-face, sweating and screaming tantrums, only to disrespect me after FIFTEEN YEARS of patience, dedication, sacrifice, and wise parenting.  MY kid would never do that.

Seriously, though, the thing about blogging about food is that I spend a lot more time on the computer than I do in the kitchen.  Some days, that ends up being a good thing.  Like today, for instance.  Even though it’s raining pretty steadily outside, and would therefore be a better day than any other this month to use the oven, I opted for a no-bake cookie, and I was glad I did.

This particular cookie is devoid of chocolate, peanut butter, Nutella, Biscoff, and toffee, just to name a few.  It is a pretty dense, eat-it-slowly kind of cookie that is sort of healthy-ish, with oats, honey, nuts, dates, raisins, seeds a few other gems.  You could even eat this cookie for breakfast.

Well, in my house, you can eat any cookie for breakfast, but that’s neither here nor there.

No bake date cookie recipe

Picture this… you mix your morning oatmeal with some granola, dried fruit and nuts, sweeten with honey, and throw in some butter just for fun.  That’s basically what this cookie is.

And there ain’t nothin’ wrong with that.

A no bake cookie with dried fruit, nuts, seeds, and oats.
Recipe type: cookies
Serves: 24
Ingredients
  • ½ cup butter
  • 1½ cups sugar
  • ½ cup honey
  • dash salt
  • dash cinnamon
  • 1 tsp. vanilla
  • ¾ cup chopped walnuts
  • ½ cup sunflower seeds
  • ½ cup unsweetened coconut
  • ½ cup wheat germ
  • 1½ cups quick oats
  • ½ cup dates
  • ¼ cup raisins
Instructions
  1. In a small pot, melt butter. Add sugar and honey, and bring to a boil, stirring occasionally.
  2. Let boil 2-3 minutes, then remove from heat and add salt, cinnamon, and vanilla.
  3. Add remaining ingredients, one at a time, stirring between each to combine.
  4. Drop into greased mini muffin tin (or drop in spoonfuls onto a baking sheet) and chill for 30-60 minutes.
Notes
If you (or your kids) are not in love with the flavor, it's probably the wheat germ. You can reduce the amount of wheat germ and make up the difference by adding more oats or coconut.

    Nice recipe! I like not having to heat the oven in this weather. It’s just my wife and me at home, and neither one of us can accuse the other about spending too much time on the computer – we both do it! Though I sometimes do think I should limit myself just a bit. Anyway, thanks for this.
