My bedroom has been in a pretty desperate condition, overflowing with useless crap, and dirty clothes, and dust. I just keep putting new containers on the floor. My husband has about had it with me and the bedroom mess. I’d love to tell you that I put it off because my vacuum broke, but honestly, I was putting it off long before that.
Today, I borrowed a vacuum from my neighbor, and tackled the bedroom. I’m allergic to dust, so I was not really enjoying myself, but I distracted myself from the discomfort with some episodes of What Not to Wear and The Office.
Did I ever tell you how much I love having a DVR?
Also, my niece and nephew spent the day with us, and they’ve sort of come to expect me to bake something when they are over, because I almost always do. Vacuuming, dusting, re-arranging furniture, purging, sorting,… and baking? Weird combo. I kept the baking simple and made these quick and easy waffle cookies.
I’ve made Chocolate Waffle Cookies before, perhaps you remember? A reader commented that she made a cinnamon version, and today felt like the perfect day to do the same thing. I left the chocolate out of the basic recipe, and added cinnamon. If I had it to do over, I might reduce the flour a bit, because it was a really heavy dough, which made a really heavy cookie.
I really really love that these get cooked in the waffle iron. It only takes a few minutes to heat up, the cookies take just a few minutes to cook, the clean up is fast, and it doesn’t make the entire kitchen hot. Win-Win.
The really great thing about this cookie is that is smells just like a cinnamon roll, and tastes very similar. It therefore requires icing.
And a dusting of cinnamon and sugar.
These were really quite fun to make! It’s a quick kind of satisfaction when you can create, bake, frost, and serve your cookies within 15 minutes. Quick satisfaction indeed. With plenty of time left over to finish the vacuuming.
- ½ cup butter, softened
- ¾ cup sugar
- 2 eggs
- 1¾ cup flour
- 2 tsp. vanilla
- 2 tsp. cinnamon
- about 1 cup powdered sugar
- about 2-3 T. milk
- Mix butter and sugar. Add eggs and vanilla and mix.
- Add flour and cinnamon, and mix until incorporated.
- Place large balls of dough in a hot waffle iron, and cook until done throughout, about 3-4 minutes.
- For icing, combine sugar and milk and stir until smooth. Adjust consistency by adding more milk or more sugar. Icing should be slightly thin.
- Drizzle icing over cookies, and sprinkle with cinnamon and sugar.

Hey Joanne, thanks for the comment! I’ll have to experiment with chocolate chip. When you make cookies in the waffle iron, you have to use a really heavy dough. Otherwise, they turn into a big mess that is impossible to remove from the waffle iron. If I figure one out, I’ll let you know! Thanks for the idea!
