Chocolate Pudding (egg-free) {Appreciation Post}

Today I want to blog about the man behind the woman behind the blog.  Because he is one awesome man, and one who never puts himself in the spotlight, much to my dismay.

Plus, he’s super cute. {see photo below for proof.}

If you’re one to frequent food blogs, you might notice quite a few of us talking about our significant others today.  It’s like it’s a conspiracy or something.  {Scroll to the bottom for the complete list.}

I had a few questions for Robb about being the husband of a *ahem* rich and famous food blogger.  But before I get to his responses, let me introduce this recipe.

This simple chocolate pudding is a recipe I learned from Robb’s family.  He loves foods that are basic, simple, uncomplicated.  This pudding is one of his favorites, and we eat it pretty regularly.

You may have heard me lament in the past about his preference for vanilla over chocolate, especially in the ice cream department, but thankfully, pudding is one exception to that rule.  Chocolate pudding tastes just like love.

1. I first asked him what my favorite blog is, and what his is.  He doesn’t really read blogs much, aside from the occasional visit to some IT blogs, and mine, of course.  {I say “of course” but the truth is I had to pester him to subscribe to the RSS feed so he gets notifications when there’s a new post to read.}  He said my favorite blog is Pinch of Yum, which might be true.  Mostly I talk to Robb about that site because I love that they are kind of a blogging super-team, and I probably spend a lot of time making Robb feel bad because he is not the talented web guy that Bjork is.  His talents are more hardware-oriented.Robb square

2. I asked him what his favorite prop was, and what he thought my favorite prop was.  He likes the backgrounds, mostly because he loves the idea that in this one little spot in the middle of my disaster area of a kitchen, the food can be transformed into something magical and beautiful and kind of other worldly.  I quite agree with him, actually.  People tell me they wish they had meals at my house, and I tell them they would most likely be disappointed.  Things can look much more impressive in photos when staged right.

3. Third question: What is the weirdest thing you’ve seen me do for a post?  He apparently doesn’t think anything I do is out of the ordinary {which is probably a good thing for me} but he did think this post was pretty weird.  He found it amusing that I just drew some cartoon cheese straws into my photos when the real cheese straws broke into a million pieces.

4. I asked Robb what he would call his own blog, if he had one.  {I have encouraged him strongly to do this, and even suggested the blog name “Offending the Offended,” but he strongly resisted my encouragement.}  He has gotten a lot of compliments on his amusing e-mails at work, but not so many it has made him want to write his thoughts down for any other reason.  He did tell me that he would call it “The Perspective” or maybe “Why Robb’s Always Right,” the latter presumably a comment on his political leanings, and not the state of his marriage.  Because I’m always right.

5. What do you do for a living and what are your hobbies?  Robb is an IT guy, NOT a web guy, a point which has caused great angst around our home, especially on days when the blog is glitchy or my hosting company decides to disable my site.  He likes camping, and we generally take several camping trips each summer.  He also enjoys gardening, which I suspect is due to his farm boy upbringing.

Oh, and bonus question: Who does the dishes?  I could probably tell you that the answer is no one, since our kitchen is basically never clean. {For the record, Robb’s answer was, “Everybody. Or Nobody.”}  However, I do dishes far more than anyone else in the house, which I doubt anyone believes, given the level of complaining that goes on.  Robb is really good to scrub the dishes that I have trouble getting clean, and washing all the big stuff that doesn’t fit in the dishwasher, and I’m really good at quickly loading and unloading the dishwasher, and leaving the big stuff sitting in the sink.  What can I say?  It’s a gift.

 

I love this chocolate pudding, and we make it pretty regularly here.  It’s wonderful for mixing up early, and surprising the family with after dinner.  It’s not so heavy you feel like you’ve over eaten, and not so light that you forget you’ve had dessert.

It’s a great addition to a trifle, too.  Just layer with some brownie pieces and whipped cream, and you have yourself one impressive treat!

Chocolate Pudding (egg-free)
 
A simple egg-free homemade chocolate pudding.
Author:
Recipe type: Desserts
Serves: 5
Ingredients
  • 4 cups milk
  • 1½ cups sugar
  • 3 T. cocoa powder
  • 7 T. cornstarch
  • 1 tsp. vanilla
  • whipped cream (optional)
Instructions
  1. In a heavy saucepan, heat milk to warm, not boiling.
  2. Meanwhile, place sugar, cocoa, and cornstarch in a small bowl, and mix.
  3. Scoop about 1 cup of the warm milk into the bowl with the chocolate mixture. Stir.
  4. Pour chocolate mixture back into the saucepan with the remaining milk, slowly, stirring as you do.
  5. Heat over medium high heat, stirring frequently, until mixture starts to boil and thicken. Remove from heat and add vanilla.
  6. Pour pudding into individual dishes, or one large bowl. Cover with plastic wrap. Chill at least 2 hours to cool. Garnish with whipped cream, if desired.
Notes
This pudding will form a skin in the fridge. To avoid this, I cover with plastic wrap so that the plastic actually touches the pudding as much as possible, essentially creating a plastic skin that will be removed before eating.

    I totally agree about the simple, uncomplicated recipe thing (This pudding is perfect), AND very much agree about the drawn cheese straws. That’s so freakin’ cute! I love that you did that.

    IT…Web… there’s a difference?! 😉 My friends think because I have a blog, I can go to their office/house and take care of their IT issues! I get his pain. 🙂

      Steve, I haven’t tried it with almond milk, so I can’t really be sure. However, my sister-in-law cannot have dairy, and I know she frequently uses almond milk instead of regular in her baking. I would think it would be worth a try. Good luck!

    I made a double batch of this today.
    I used coconut palm sugar and powdered vanilla bean because that’s what I have
    It came out great. I’m excited to try it for frozen pudding pops this summer.

    Holy cow, too much sugar. The creaminess and consistency is wonderful. Great option for the person in my family with egg allergy. I think the sugar could be cut back to 3/4 cup.

    So super sweet! Added extra cocoa powder and some espresso powder and would still reduce to only one cup next time. Texture was heavenly!!!
