I felt a little guilty telling her to stick it out and try to make the best of it, but I think 9 out of the last 10 times I have checked her out of school I have regretted it.  Most of the time, she is really not that sick, and whatever does ail her is instantly better as soon as everyone else gets home from school.

Call me skeptical.

Nevertheless, I figured if she did have an upset stomach and a bad school day, a little light, refreshing, minty beverage might be a welcome relief.  This was as good an excuse as any to make this fun beverage I have been craving for a couple weeks now.  I picked up some fresh mint and ginger ale while I was out, and whipped these up right before she got home.

I knew the mint would do her good.  She has a long and painful history of… well,… hmm…  let’s just say we have developed several techniques for dealing with car sickness.  One of our favorites is keeping a bag of mints with us on long road trips.  The mint seems to calm her stomach, and I’m always a fan of anything that helps the kids breath.  (No one wants to smell the barf burps.)

Being a non-drinker, I’m always on the lookout for a fun drink that doesn’t involve alcohol.  I like sharing them with my kids, too.  There are a couple ways to make virgin mojitos.  One technique involves making a mint-infused simple syrup.  It’s nice because it doesn’t involve a lot of leaves floating in your glass.  

But for the lazy among us, (read: ME) there is this version.  This involves putting mint leaves and sugar and slices of lime straight into your glass.

The mint leaves don’t bother me at all.

Maybe that’s because, after years of bringing not-that-sick kids home from school, my tolerance for what bothers me has increased.  Dang kids will do that to you every time.

A refreshing, non-alcoholic mint and lime drink.

Ingredients
  • mint leaves
  • limes
  • sugar
  • ginger ale
Instructions
  1. In each glass, place about 5 roughly chopped mint leaves, and the juice from half a lime.
  2. Add about 1 T. of sugar to each glass, and stir quickly to help sugar begin to dissolve in the lime juice.
  3. Add 8-10 oz. ginger ale to each glass, and ice if desired. Give drink a quick stir and serve cold.

    Do you ever watch the Simpsons? This post reminds me of the episode where Bart swallows the razor sharp toy in the box of Krusty’s cereal and the only person who believes he’s really sick is Lisa? Those darn kids, always tricking their mom into giving them a day off of school. That never worked with my parents. I better be puking my guts out if I’m going to stay home. You’re a kick ass mom for making this yummy drink. It sounds delicious! Me being the lush that I am would tip some booze in there. Then it’d be perfect 😉
