Chocolate Chip Buttermilk Scones from JensFavoriteCookies.com  I remember when I was sixteen, and my dad was trying to explain to me what a pain in the neck it is sometimes, owning a car.  I didn’t believe him.  Or, more likely, I didn’t want to think about it.  A car meant freedom and that’s all I cared about.

What he should have told me is that owning a house is far worse.  Oy.

This week’s adventures in home ownership: mold removal.  What a disgusting job.  Long story short, a leak under the kitchen sink caused us to have to rip out half the drywall and some of the carpet in the bedroom below.  It was so much worse than we expected.

Maybe I’m just saying that because it means I have to go to the home improvement store.  Me.  The Queen of Everything.  At Lowe’s.  I hate that store.  I’m grateful that it’s there and available, but I really hate shopping there.  I mean, seriously, why can’t men make a store pretty and pleasant to shop in?!  Who actually wants to shop in a huge warehouse that smells like dirt and sawdust?  Blech.

You should have seen me, helping Robb carry the dry wall and load it in the back of the pickup.  He may as well have taken our 6 year old nephew.  I was practically useless.  And I’m sure I looked awesome, carrying my little corner of sheet rock so poorly.

If I’m being completely honest, I’m pretty grateful Robb is willing and able to tackle this disgusting project, because I sure don’t want to do it.

Also?  The Fruitarian deserves a big fat high five (because he is WAY too cool for hugs) for dealing with the remodel of his bedroom so gracefully.  I mean, everything he owns is stacked in the hallway.  Which is super fun to deal with.

And he’s sleeping in his brother’s room, on a bean bag half his size, and living out of a laundry hamper.

Now that I think of it, I’m not sure a high five will be enough.  I’m thinking baked goods are in order.

This particular son gushed over the Coconut White Chocolate Buttermilk Scones I made some time back, and he has been asking me to make them again.  But, as I am fresh out of both coconut and white chocolate, I thought I would surprise him with simple Chocolate Chip Buttermilk Scones instead.

I have a strong belief that there is no discomfort which cannot be softened by baked goods made with buttermilk and chocolate chips.

If only scones could do dry wall repair, we’d be set!

Chocolate Chip Buttermilk Scones

A simple buttermilk scone with chocolate chips.

Serves: 10
Ingredients
  • 2 cups flour
  • ¼ cup sugar
  • 1 T. baking powder
  • ½ tsp. salt
  • 4 T. cold butter
  • 1 egg
  • ¾ cup buttermilk
  • 1 tsp. vanilla
  • ½ cup chocolate chips
Instructions
  1. Combine flour, sugar, baking powder, and salt. Cut in cold butter, mixing until butter pieces are very small.
  2. In a separate bowl, combine egg, buttermilk and vanilla. Add all at once to flour mixture, and mix into a heavy, sticky dough.
  3. Fold in chocolate chips.
  4. Shape dough into 10-12 individual scones, and place on a baking sheet. (*optional: sprinkle tops with sugar before baking.) Bake at 350F for 25-30 minutes, until lightly browned on the edges.

    I’m the weirdo who enjoys shopping at Lowes. I guess because I feel really independent and I see all the guys and I’m like yea that’s right. I can fix stuff. Actually I’m usually just buying stuff for photography but yea. Anyway, ew mold. I’m glad you have these scones to distract you for a bit!
