Fruity Marshmallow Popcorn

A popcorn recipe with fruity marshmallows.  This popcorn and marshmallow recipe is very easy and fast to make, and a delicious change from regular popcorn.

marshmallow recipeI spotted lemon flavored marshmallows at the grocery store around Easter, and I’ve had them rolling around in my head ever since then.  I finally came up with a great idea (namely, this popcorn) and when I went back to the store to get them, they were conspicuously missing.

Dang those seasonal ingredients!

Note to self: Using self-control to not purchase items I may never use is overrated.

I settled for fruit flavored marshmallows.  You know the kind I mean?  They come in lots of cute pastel colors.  Honestly, I don’t believe I have ever purchased them before.  Maybe I’m boring, but I always get the plain variety.  Perhaps it’s because we don’t really eat marshmallows plain much around here.  I never gave my kids baggies of marshmallows to keep them happy in the car.  I always opted for goldfish crackers or Cheerios.  Marshmallows are for baking with.

Before you go telling me how similar this is to Rice Krispie Treats, let me just say that popcorn is WAY better than krispie treats.  WAY better.  In fact, I believe I talked all about my feelings towards krispie treats, in this post about krispie treats.

Just so I’m clear and up front, let me say that I have seen this recipe (or very similar variations) in about 352,000 different places on the internet.  So, while I certainly cannot claim this recipe as my own creation, I really cannot give attribution to any place in particular either.

Most of the recipes used plain marshmallows and brown sugar, for a caramel-ish flavor.  I used fruity marshmallows and regular sugar for a little lighter and brighter flavor.

I know, I know… you’re all jumping in line to celebrate my mediocrity originality.

Let’s be honest.  You don’t always need something new and original and full of never-been-done-before brilliance, do you?  Sometimes the simplest ideas are the best.

Sometimes?  More like, frequently.  Usually.  Often.  Almost always.

I really can’t wait until next Easter, to try this with the lemon marshmallows!

A marshmallow coated popcorn treat.
Recipe type: snack
Serves: 6
Ingredients
  • 1 pkg. fruit-flavored mini marshmallows
  • ½ cup butter
  • ½ cup sugar
  • 10-12 cups plain poppped pocorn *(see notes)
Instructions
  1. Melt butter over medium high heat. Add marshmallows and sugar, and heat and stir until completed melted.
  2. Using a large bowl, pour marshmallow mixture over popcorn, and stir well until evenly coated.
  3. Let sit 10-15 minutes before eating.
Notes
I use an air popper to pop 1 cup kernels, which gives 10-12 cups popcorn, depending on the brand. You can also use microwave popcorn, as long as it is unflavored.

    I’ve made cake mix cookies before, but love the strawberry addition. The strawberry mixture took a bit more sugar but otherwise a delightful great!
    I just happened upon the recipe looking for a use for strawberries that were not looking the greatest, this worked perfectly!

    I was reading one of your recipes and you mentioned why you live in such cold and I had to laugh. I use to sound like you. I lived in the SLC area for 38 years. How long have you lived in Utah? All my family still live in the SL area. I moved to Reno almost 20 ago. The winters are so mild compared to SLC. You should try it. LOL I love your recipes. You should of seen the looks I got when I made “Frog Eye Salad”! I’ve made it a tradition in my family. Keep up the good work! Happy Holidays!!
