Graham Cracker Chocolate Chip Cookies

graham cracker recipeOf all the social media out there, I might love Pinterest the best.  I follow a lot of other food bloggers, and consequently, my feed is full of gorgeous meals, drool-worthy desserts, and decadent cookies.

Not long ago, I pinned these gooey S’mores Cookies from Kevin and Amanda, and I just could’t stop thinking about them.  I wanted to create my own version, one without marshmallows.

Not that I have anything against marshmallows.  I just wanted to keep it simple, like a plain old chocolate chip cookie with a little graham cracker surprise.chocolate chip cookie

You would die if you saw me photographing these.  First of all, the best thing I have for a backdrop is the dog kennel.  I know that sounds really strange, but it’s handy and it works.  I set the kennel on the table and leaned these white boards against it.

Then my brilliant teenage son, The Lizard, thought it would be a great idea to put the dog inside the kennel.  Which was on the kitchen table.  Which had cookies on it.

The kids were hanging around my photo shoot like zombies that have just found brains, waiting for the moment I would give them the okay to dive face first into the cookies.  I had melted chocolate on my hands, and I was working really hard not to get the chocolate on my camera.

And then the doorbell rang.  And the dog went nuts.  The kids were running to the door, I was yelling, the dog was barking, it was chaos.

It’s lucky I had any cookies left to share with you!

My version of these cookies has less flour, so the cookies are very flat and soft.  They would be totally fine with a little more flour.

And, although I didn’t use any, I think it would be totally appropriate to use 1/2 tsp. cinnamon in this cookie.  Or you could use the cinnamon graham crackers, which would be delicious too.

So many options!  Maybe I’ll try them with chocolate grahams sometime.  I should check Pinterest and see if that’s been done already!

Graham Cracker Chocolate Chip Cookies

A chocolate chip cookie with graham cracker crumbs.
Recipe type: cookies
Serves: 2 dozen
Ingredients
  • ½ cup butter
  • ¾ cup sugar
  • 1 egg
  • 1 tsp. vanilla
  • ½ tsp. salt
  • 1 tsp. baking soda
  • ¾ cup graham cracker crumbs
  • ¾ cup flour
  • ½ cup chocolate chips
Instructions
  1. Cream butter and sugar. Add remaining ingredients in order, mixing between each.
  2. Drop spoonfuls onto a baking sheet, leaving room for spreading, and bake at 350 degrees for 8-10 minutes.
  3. Let sit on baking sheet for 1-2 minutes before removing to a cooling rack.

    hehe, Zombies finding brains, love it! I keep saying I need to take a full uncropped photo of one of my setups but I think I’m just too embarrassed. Love these cookies, Graham crackers are a great addition and a great substitution for those who can’t eat nuts to give the cookies a little crunch!

    These cookies look fabulous! Great twist on the CCC by adding graham cracker crumbs. I love the visual I got while reading this post – your beautiful photos belie the cheerful chaos happening in your kitchen. I really need to step up my photo styling. Now I know that I”ll be able to use my puppy’s crate to hold up backgrounds 😉

    I followed this recipe and thy turned out FLAT…I thought this one would be different..but another recipe where they look nothing like the picture. do you know why this happens? did you do anything special?

      Mine were pretty flat, too, but I kind of liked them that way. You could try adding a little more flour, and if you like them puffy, add about 1 tsp. baking powder. Let me know if that helps!

    Yuck. These turned out burned around the edges from being so flat. The insides were baked perfectly but sooo salty!

      Johanna, I’m sorry they didn’t turn out for you. It’s possible they were a little overbaked. Cookies generally do better when underbaked, and then left to sit a couple minute on the pan after removing them from the oven. You can also try adding a little more flour if you like a heavier texture. I don’t know what part of the world you are in, but where I live in Utah, we are at kind of a high altitude, which can definitely make a difference, too. You can also reduce the salt to 1/4 tsp, and use unsalted butter, if they seem salty to you. I hope you’ll give them a second chance! 😉

    Hi! My kids and I tried these today as an after school snack and they were amazing!!!! However we didn’t have any chocolate chips so I took a square dark chocolate with macadamia nuts Ritter bar out of the freezer and smashed it into tiny pieces….heavenly! I am saving a lot of your other recipes as well for later. Thanks so much for posting your recipes!

    My goodness Jen – I was asking my followers if they had heard of this special graham cracker chocolate chip recipe I got off a box of Keebler graham crackers in about 1980…………One of my followers linked me up to you! How silly of me not to ask you first. You are the cookie girl! I will be making these once again- I love them and have since I was 17 years old (1980) and so did my first husband……..thanks for having this!

    These were seriously the best chocolate chip cookies! I did add a bit more flour so they wouldn’t be as flat and they turned out AH-MAZING! Making them again this weekend!

    They are very plat, but I was using them around the fire with toasted marshmallows sandwiched in between – so thin and crisp was perfect!
