Handmade Cranberry Lime Sodas

For the most part, I have kept this blog about cookies, and nothing else.  Today, however, I thought I would share a recipe or two that I have made for the holiday season.  I started making these homemade lime sodas a few months ago, and just love them.  For Christmas gifts, I decided to add some fresh cranberry to the lime and see how it tasted.  It turned out pretty delicious, and well… just pretty too.

I started by peeling one lime.  Then I took a handful of fresh cranberries and cut each one in half to release the yummy cranberry-ness.  I put the cut cranberries and the lime peel in a pot.  (Don’t use the fruit of the lime, just the peel.  If there’s not enough lime flavor for you, you can add a little fresh lime juice to your finished product.)  Add one cup of sugar and one cup of water and bring to a boil. 

While it was boiling for 2 minutes or so, I prepared a half-pint jar by filling it with more fresh berries and lime slices.

So cute…  Once the syrup is done, I removed all the pieces of berry and lime peel, and added just a drop or two of red food color.  I poured the syrup into my prepared jar and closed it up.  I dressed it up with a bit of green and red fabric and a piece of ribbon.

I gave my friends each a jar along with a small bottle of club soda.  To mix these, put a little syrup in the bottom of a glass, and pour club soda over the top.  The mixture should be about one part syrup to two parts soda, but you can adjust it to your taste.

I just love how beautiful these turned out!  One batch got me about 3 half-pint jars of syrup, keeping in mind that the jars were filled with fruit first, and a little leftover to enjoy my own soda when I was done.  I’m not sure how long these will keep, but I suggest drinking them right away.

Serves: 2
Ingredients
  • Peel of one lime
  • A handful of fresh cranberries, sliced in half
  • 1 cup sugar
  • 1 cup water
  • 1-2 drops red food coloring
  • Club soda
Instructions
  1. In a pot, place sugar, water, lime peel, and cranberries. Bring to a boil, and let boil 2-3 minutes.
  2. Remove fruit and peel pieces, and add food coloring. Let syrup cool.
  3. When ready to drink, put one part syrup and two parts club soda in a glass. Garnish with a lime wedge, if desired.
