Chocolate Marshmallow Cookies

A recipe for a chocolate cookie stuffed with a gooey marshmallow center.

Serves: 3 dozen
  • 1 cup shortening
  • ½ cup brown sugar
  • 1 cup sugar + more for rolling
  • 2 eggs
  • 1 tsp. vanilla
  • 1 tsp. salt
  • 1 tsp. baking soda
  • ⅔ cup baking cocoa
  • 2 cups flour
  • about 12-15 large marshmallows, cut into quarters
  1. Cream shortening and sugars. Add eggs and vanilla and mix well.
  2. In a separate bowl, sift together flour, cocoa, salt, and soda.
  3. Add dry ingredients to shortening mixture, a little at a time, mixing only enough to incorporate.
  4. Using your hands, take a ball of dough, flatten it, and place a marshmallow piece in the center. Wrap the dough around the marshmallow, taking care to seal the dough up completely.
  5. Roll in sugar, and place on baking sheet. Bake at 400 degrees for about 4-5 minutes.
