Pesto Almonds

Whole, baked almonds with a pesto coating.
Recipe type: Snacks
Serves: 2 cups
  • 2 egg whites
  • ¼ cup packed whole basil leaves
  • ¾ tsp. salt
  • ½ tsp. garlic powder
  • ¼ tsp. red pepper flakes
  • 2 Cups whole, unsalted almonds
  • ¼ Cup finely grated parmesan cheese
  1. Preheat oven to 225° F. Line a large baking sheet with parchment paper and set aside.
  2. In a blender, combine egg whites, basil, salt, garlic power, and red pepper flakes. Process on low speed until mixture is pureed.
  3. In a small mixing bowl, toss the basil mixture with the almonds until almonds are well coated. Set aside for about 5-10 minutes (the almonds will soak up some of the excess moisture).
  4. Stir in the parmesan. Transfer the almonds to the baking sheet and spread evenly into a single layer, leaving any excess basil mixture in the bowl.
  5. Bake for 30 minutes (or longer if needed), stirring every 15 minutes, until the basil mixture is dried and the almonds are crunchy. Let cool and enjoy.
