Spiced Zucchini Crumb Muffins

A spiced muffin with shredded zucchini, and a walnut crumb topping.

Ingredients
MUFFIN:
  • ½ cup vegetable oil
  • 1 cup brown sugar
  • 2 eggs
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon cloves
  • ⅔ cup quick oats
  • about 2 cups shredded zucchini
  • 1½ cups flour
  • ½ cup chocolate chips
CRUMB TOPPING:
  • ½ cup finely chopped walnuts
  • ½ cup flour
  • ⅓ cup brown sugar
  • 3 tablespoons sugar
  • 4 tablespoons butter, melted
Instructions
  1. Combine oil and sugar. Add eggs and mix well.
  2. Add salt, soda, baking powder, cinnamon, nutmeg, and cloves, and mix well. Add zucchini and oats and mix.
  3. Add flour, and mix until combined. Fold in chocolate chips. (Batter will be runny.)
  4. For crumb topping, place all ingredients in a small bowl, and use a fork to mix until crumbly.
  5. Line muffin pan with cupcake liners. Fill cups ¾ full with muffin batter. Sprinkle a generous amount of crumb topping on each muffin. Bake at 350F for 18-20 minutes.
