Molasses Waffle Cookies with Chocolate Frosting

A ginger molasses cookie baked in a waffle iron, with chocolate frosting.

  • ½ cup butter, melted
  • ¼ cup molasses
  • ½ cup brown sugar
  • 2 eggs
  • ½ tsp. cinnamon
  • ¼ tsp. ginger
  • ¼ tsp. nutmeg
  • 2 cups flour
  • 4 T. butter, melted
  • ½ tsp. vanilla
  • 1 tsp. milk
  • 1 T. cocoa powder
  • 1½ cups powdered sugar
  1. Combine melted butter with brown sugar and molasses. Add eggs and mix well.
  2. Add spices, mix to incorporate.
  3. Add flour and mix well. It should form a heavy dough.
  4. Drop large balls of dough onto a heated waffle iron. Close waffle iron and cook for 3-4 minutes, until brown.
  5. FOR FROSTING: Combine all ingredients, stirring until smooth.
  6. Frost warm cookies immediately.
