Raspberry Sorbet

This berry sorbet recipe is easy to make and tastes delicious!  Use fresh berries for a refreshing summery treat.

Recently, I bought big packages of both strawberries and raspberries.  The kids went to town on the strawberries, eating them right out of the package.  I insisted the raspberries be left alone so I could make something fun with them.

I’ve been wanting to make sorbet ever since I had the best blueberry sorbet in the known universe a few years ago on a cruise.  Of course, I was also worried about comparing my first-time attempt to the amazing gourmet stuff we were served on the cruise ship.

Turns out, I didn’t really need to worry.  Sorbet is crazy simple to make (this one has only 5 ingredients!), and it’s easy to make it really delicious.  I added a mint leaf to my dish, and I loved what the mint did for the flavor.

Sorbet is a great option if you are living a dairy-free life.

And, if you are living a dairy-free life, my condolences.  A close friend of mine had some health problems, and had to cut both gluten and dairy from her diet.  She said not eating cheese was even harder than not eating wheat.  I believer her, too.

So, if you’re off ice cream, just switch to sorbet.

Is it wrong for me to hide this sorbet from my kids and just share it with Robb?  We’ll be happy to quietly have a small dish each evening after the kids go to bed.  

It seriously makes me want to make sorbet all summer long.  It’s that awesome.  And that easy.

Raspberry Sorbet

A simple frozen raspberry sorbet.

Ingredients
  • 1 cup sugar
  • 1 cup water
  • 4 cups fresh raspberries
  • 1 lemon
  • ¼ cup corn syrup
Instructions
  1. Combine sugar and water in a small saucepan. Bring to a boil, and let boil for about 3 minutes. Remove from heat.
  2. While syrup cools, place berries in a blender or food processor. Juice the lemon, and add lemon juice to berries. Blend or process until smooth. (This should make about 2 cups of puree.)
  3. Add corn syrup and simple syrup to berries. Blend until smooth.
  4. Pour mixture into a plastic container with a lid, and freeze. Stir mixture every 30 minutes for 4-5 hours until mixture is set. Serve frozen.
