March Wrap-Up


I can’t believe March is over already.  It kind of flew by for me.

You know what I love about March?  First of all, it’s Girl Scout Cookie season.  I’m a big fan of the Thin Mints and the Tagalongs, but the Samoas have grown on me over the years.  This year, I decided to make a rice krispie treat with the flavors in the Samoas (caramel, coconut, and chocolate) and we could not stop eating them.  They’re even better than the original cookie, if you ask me.

Second, it’s St. Patrick’s Day in March, which is really just a good excuse to wear my favorite green t-shirt.  I also made green cream cheese mints, and Virgin Mojitos.  The mojitos were SOO refreshing!  That lime and mint combination is the perfect way to welcome the upcoming spring season.

Third, it’s my nephew’s birthday, and he requested Brownie Cookies as his personal birthday treat.  These babies are spot-on delicious, and will make any chocoholic very, very happy.

Last but not least, let’s not forget chocolate peanut butter day.  It’s funny how many crazy food holidays are out there, and chocolate peanut butter day might be my favorite.  I don’t see any reason not to celebrate the most fantastic flavor combination known to man.  This year, more than 30 of us celebrated together, so if you’re in love with chocolate peanut butter treats, you’ll find some really fantastic ideas in this post!

bring myself to part with them.  I’ve made them at least three times
since!  They are my new favorite chocolate obsession, and hands-down
one of the best recipes on this blog.

Most of my fans chose a peanut butter cookie with a little bit of chocolate, which was fortunate, because I had already made this amazing peanut butter cookie and stuffed it with a little chocolate filling.

I showed Robb my photos of this creation, and his reply was, “Did I get one of those?”  Pretty sure I made these while he was out of town.  There was no hope for him.  They were gone within hours.

Don’t feel bad for him, though.  He ate at at least a dozen fantastic restaurants without me while he was out of town.

Brownie Cookies

Fudge brownie cookies;  I love this fudge brownie cookies recipe!  It always turns out perfect and delicious.

Brownie Cookies from - these fudgy cookies have all the flavor of a brownie, but in convenient cookie form!I love brownies.  I mean, lluuuuuuuurvve them.  They’re all chocolatey and fudgy and rich, and they’re better than cake any day.

I recently told my nephew that for his birthday, I would give him any kind of cookie he wanted, anything he could dream up.  And he dreamed up brownie cookies with white chocolate chips, sandwiched with marshmallow frosting.  He was very specific.

Be still, my heart, I might marry this boy if he wasn’t my 11-year-old nephew.

He made a fantastic choice.  These cookies, they require care.  They’re not some sort of pre-packaged nonsense, or 5-minute cake mix cookie or anything like that.  These require love.  You literally can’t make them without putting love in them.

I should add love to the ingredient list.

Virgin Mojitos

Virgin mojito recipe; Learn how to make a virgin mojito with this easy recipe.

How to make Virgin Mojitos from  -  this mint and lime drink is non-alcoholic and so refreshing!The Hippie Chick called me this morning, about an hour after school started, to tell me she didn’t feel very good.  This time she didn’t even bother trying to sound sick.

I felt a little guilty telling her to stick it out and try to make the best of it, but I think 9 out of the last 10 times I have checked her out of school I have regretted it.  Most of the time, she is really not that sick, and whatever does ail her is instantly better as soon as everyone else gets home from school.

Call me skeptical.

Nevertheless, I figured if she did have an upset stomach and a bad school day, a little light, refreshing, minty beverage might be a welcome relief.  This was as good an excuse as any to make this fun beverage I have been craving for a couple weeks now.  I picked up some fresh mint and ginger ale while I was out, and whipped these up right before she got home.

I knew the mint would do her good.  She has a long and painful history of… well,… hmm…  let’s just say we have developed several techniques for dealing with car sickness.  One of our favorites is keeping a bag of mints with us on long road trips.  The mint seems to calm her stomach, and I’m always a fan of anything that helps the kids breath.  (No one wants to smell the barf burps.)

Of course, all three of my kids ended up being either busy or sick on their assigned night to cook dinner.  Figures.  Kids have the most convenient timing.

I didn’t have any trouble making some treats, though.  {I never do.}

This week, I figured it would be a good time to revisit the cream cheese mints.  There’s something about the mint flavor that is so refreshing, don’t you think?

And, I made them green, because it’s March.

Spring came early this year.  I think it’s because the winter was so nasty.

Whatever the reason, this spring fever has me craving fruity cookies of all kinds.  So guess what I did?

I put together a collection of some of my favorite fruity cookies from around the web.  All these cookies have one big requirement to make it on this list: They have to contain actual fruit in some form.  (In other words, no strawberry cake mixes or lemon pudding mixes, it must be real fruit.)

Samoas Rice Krispie Treats

Samoas Rice Krispie Treats from  Don’t you love when the timing is just perfect?

For example: Robb and I have been watching Breaking Bad on Netflix.  Because it is an awesomely well-written show.  And even though I am starting to kind of hate Walt, it’s not going to keep me from seeing how his story ends.

There are 5 seasons of this show.  When we watched the final season, there were only 6 episodes on Netflix.  Robb assumed this was because there were only 6 episodes period.  But I thought, there have to be more.

I thought it even more after we watched that 6th episode.  I was so annoyed that it didn’t wrap anything up, and ended with a cliffhanger.  “This cannot be the end!”  I screamed.  “It doesn’t make any sense!”  Robb just shrugged his shoulders at me.

But… literally the following morning the rest of that season showed up on Netflix.  Talk about kismet.

Chocolate Chip Cookies Without Eggs

I guess you just can’t beat a classic.

I figure, if I’m going to make chocolate chip cookies again, I need a good reason.  A twist.  Something new, some reason you would choose this cookie over, say, this one, or this one, or even this one.

And, I have it.  Because these are chocolate chip cookies without eggs.  Which means two things:

1- If you have an egg allergy, you can still have crazy awesome cookies.
2- Even if you don’t have an egg allergy, you might want these anyway, because the substitute ingredient makes these so soft, so rich, and so flavorful, you literally will not miss the eggs.

My evidence is completely anecdotal, as usual.  I made these at midnight, while waiting for Robb to come home from a very late night at work.  He probably ate 6 of them before he went to bed.  Before I even photographed them, if you can believe it!

I probably ate 6 of them without noticing it the following morning.  Seriously, they’re all creamy and delicious.

The secret is the ingredient you use instead of the eggs.  The gorgeous, creamy, heavenly, gift-from-God ingredient.  Do we need a drumroll here?  {I think so.} It’s cream cheese.

Once you’ve had chocolate chip cookies with cream cheese in them, you’ll never want to go back to the regular kind.  I swear.

I should thank the egg-allergy people for forcing us into such a wonderful invention as chocolate chip cookies without eggs.

Chocolate Chip Cookies Without Eggs

A delicious, soft, allergy-friendly cookie that is made without eggs.
Cook Time9 mins
Servings: 3 dozen

  • 1/2 cup butter, softened
  • 8 ounces cream cheese, softened
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups flour
  • 1 cup chocolate chips


  • Cream butter, cream cheese, sugars, and vanilla. Add salt, soda, and flour, and mix until combined. Mix in chocolate chips.
  • Drop spoonfuls onto a baking sheet, and bake at 350F for 9-11 minutes.
  • Let cookies rest on the baking sheet 2-3 minutes before removing to a cooling rack.
