Pistachio Caramel Cookies & St. Patrick’s Collection

Recipe for pistachio cookies with caramel centers;  These pudding cookies are soft, green, and easy to make.

pistachio cookiesI have this friend, we’ve known each other since Nixon was in office.

Well, maybe not Nixon, but you get the idea.

Anyway, I love her dearly, but she has terrible taste in ice cream.  Sometimes we go to this local ice cream place together.  It’s the kind of place where the small sundae is enough to feed two people, and the ice cream and toppings are dripping out over the sides of the glass.  The food there is nothing to write home about, but the ice cream is memorable.

I always get peppermint ice cream with hot fudge, because it’s the obvious best tasting choice.  I can’t think of one thing I like better than hot fudge, unless it’s hot fudge with peppermint ice cream.  It’s the stuff dreams are made of.

But my friend always gets pistachio ice cream with caramel sauce.

Actually, now that I think about it, it does sound pretty good.  Just nowhere near as good as peppermint and hot fudge.

Even though she is wrong about this important topic, she is one of my oldest and loyal-est friends, so these cookies are totally for her.

Pistachio Caramel Cookies & St. Patrick's Collection

Easy pistachio cookies with caramel centers.
Recipe type: Cookies
Serves: 2-3 dozen
Ingredients
  • 1 pkg. sugar cookie mix
  • 1 box (4 serving size) pistachio flavored instant pudding mix
  • ¼ cup flour
  • ½ cup butter, melted
  • 2 eggs
  • 1 cup dry roasted salted pistachios, chopped
  • about 25 caramels
Instructions
  1. Mix dry ingredients together.
  2. Add eggs and butter and mix until combined.
  3. Fold in pistachios. Form into balls, and place on baking sheet.
  4. Unwrap caramels, and cut each in half. Place each piece in the center of a ball of cookie dough.
  5. Bake at 350 degrees for 8-10 minutes.

    Jen, I love the backstory behind these cookies. When I first read what you were making, I thought, “Pistachio and caramel? huh. That’s a combo I’ve never seen before.” But the more I thought about it, the more it worked! Kudos to your friend for thinking outside the box! When I go for ice cream with my family, I often get black raspberry ice cream with Reese’s Peanut Butter Cups on top because I’m always in the mood for Reese’s, but our ice cream shop makes THE BEST black raspberry ice cream, so I can never choose.

    OK Jen, I’m not sure I can forgive you for this post. Talking about remembering Nixon in office? Really? Crap, I remember that too! Now I feel really old! I think you may have to just send me a batch of these cookies to make up for it. After all they are rad, cool, gnarly (not sure that applies but wanted to throw it in) and the bomb (maybe I’m a bit ahead of my time on that one but it fits!) And you my dear, are just fabulous!

    I have to agree with you…. there’s nothing that could possibly ever top peppermint ice cream with hot fudge. Nothing.
    That said, in almost any format other than ice cream, pistachio totally wins the day. Especially when there’s caramel involved. And even more so because there’s instant pistachio pudding, which totally breaks every food rule in my book, but is still one of my biggest weaknesses ever. I could honestly dive face-first into a pile of these cookies right now, healthy diet be damned. 🙂

I love pistachio but would’ve never thought to pair it with caramel. These cookies looks amazing – I’m craving them right now at 9:30 a.m. They’d totally count as breakfast, right?
