A lot of people think no-bake cookies are just for the summer, but not I.  I love a good no-bake dessert any old time of year.

I find myself making a lot of classic no-bake cookies lately.  It’s a good way to get rid of whatever I have laying around, like the coconut and the almond milk I bought for these Whole-Grain Coconut Waffles, or the walnuts I used in these Granola Bites.  Plus, they’re ready in minutes and can take care of chocolate cravings in a flash.

My kind of dessert.

This is what made me decide to bring you a bunch of quick and easy desserts that require no baking whatsoever.  More than 50 of them, in fact.  Just feast your eyes on this collection, and you’ll be no-baking your little heart out!

Murder mysteries, mostly.  I watch one series from beginning to end, then spend a few days wishing there were more episodes, then I start over with a new series.

I was sort of devastated when I came to the end of “Dexter.”  That one will be hard to replace.

Lately, I’ve been watching old episodes of “Columbo.”  Peter Falk is classic.  I even found a few episodes I hadn’t seen before.

It’s a terrible habit.  I should space them out, I would probably enjoy them more if I didn’t watch one right after another.

Pumpkin Chiffon PieI am quite literally the Queen of Procrastination.

Here is my list of things to do before Robb returns from his business trip:

Clean the house.
Do the laundry.
Pay the bills.
Make dessert.

Well, one out of four ain’t bad, right?

Truth is, the only reason I got the dessert made is that it is no bake, and uses a pre-made graham cracker crust, so I threw the whole thing together in about 5 minutes.

No exaggeration.  FIVE MINUTES.  A 6-year old could make this recipe.

It’s definitely going on my list of fastest and easiest dessert recipes EVER.

A no bake light and fluffy pumpkin pie in a graham cracker crust.
Author:
Recipe type: Pie
Serves: 6
Ingredients
  • 6-8 oz. frozen whipped topping, thawed
  • 4 oz. cream cheese, softened
  • 1 pkg. (3.4 oz) vanilla or lemon pudding mix
  • 1 cup pumpkin
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. ginger
  • 1 graham cracker crust
Instructions
  1. Mix all ingredients except crust together until smooth and fluffy.
  2. Pour into a graham cracker crust, and chill for 30 minutes or longer before serving.

2) They must be easy.  Crazy-easy.  Your-five-year-old-could-make-it easy.
3) They must be fast.  If they take more than about 10 minutes of my personal hands-on time, they’re not going to be worth it for this party.  (*Disclaimer: a couple of these recipes might take more than 10 minutes total, but not much more.  Seriously.)

Halloween easy treats

Oreo Popcorn

Oreo Popcorn recipe;  This white chocolate popcorn has chunks of Oreo cookies in it.  Simple and delicious popcorn recipe.

popcorn-recipeEven with the 100-ish cookie recipes on this site, good old-fashioned packaged Oreos are still Robb’s favorite.

He has rules for his Oreos, too.  No double stuffed, no flavored, and certainly no Golden Oreos.  The only acceptable variety is the plain, regular, original kind.

I don’t really blame him, Oreos are fantastic, although we differ on the details.  I think the different flavors are all wonderful, (variety is the spice of life, and all that) although I kind of agree about the Golden Oreos.  I can’t bring myself to spend money on them.

No matter.  I can compromise with the best of them.  I bought a package of plain original Oreos, and used half the package on this yummy Oreo White Chocolate Popcorn, and left the other half of the package for Robb to eat plain.

It’s a win-win.

The Hippie Chick absolutely adores white chocolate, especially when it’s mixed with Oreos.  She actually prefers white chocolate to regular chocolate, leading me to believe she was switched at birth.

Although, to be fair, I had a hard time keeping my hands out of this popcorn, too.  I really have a weakness for white chocolate popcorn.

You know what else?  Those pretzels covered in white chocolate.  Lawd have mercy, that stuff is like crack.

Oreo Popcorn from @JenSto2t Jen's Favorite Cookies

Let me dive in here with some details.  First, for a recipe like this, I really prefer the almond bark or candy melts.  They melt nicely, and set up well with a few minutes in the fridge.  White chocolate chips get all wonky and gross when you melt them, so please don’t use that.  Regular old white chocolate like this stuff is fine, too, although in my experience the candy coating sets up a little better.

And about the popcorn… I used an air popper {I’m sort of racist against microwave popcorn.} but use whatever method you prefer.  You’ll probably be happiest with the plain white unflavored variety, but if you happen to have only buttered microwave popcorn in your pantry, don’t let that stop you.  I used 1/2 cup of unpopped kernels, and I’m guessing here, but I think that’s pretty close to two regular microwave bags.

I used about a sleeve and a half of the regular Oreos, but next time I’m totally trying this with Mint Oreos.

Robb can just suffer.

5 Quick and Easy Treats

These desserts are easy and quick;  A collection of 5 quick and easy desserts, perfect for summer entertaining.

dessertsWe went on our first camping trip of the summer last week.  It was so nice to get out of the city for a couple days, and go where the only noise is the chirping birds.

And my stupid barking dog.  Sometimes that dog just will not shut up.

I think we need a muzzle for the next trip.

Anyhoo, Robb and I are firm believers that the food makes the trip.  If the food is not good, or if it takes too much time and effort to prepare and clean up, the trip just isn’t fun.  And we had some pretty good meals this trip.

It all made me think about treats that can be made and cleaned up quickly and easily.  I mean, you don’t have to be camping to want THAT, do you?

I compiled a few of my favorites.  These are treats that can actually be made very quickly.  And when I say actually, I mean, first step in the kitchen to first bite taken should be 30 minutes or less.

Emphasis on the “or less.”

These Buckeyes take just a few minutes to put together.  They are basically sweet balls of peanut butter coated in chocolate.  And there ain’t nothin’ wrong with that.

The party popcorn is coated in white chocolate, and made any color you want.  A couple minutes of melting white chocolate, and a few minutes of chilling in the fridge are all you need to have this treat ready for any impromptu party or get together.

These Strawberry Lemonade Cookies come the closest to taking the entire 30 minutes.  The cookies are a simple lemon cake mix cookie, while the frosting is made with a fresh strawberry puree.

The No-Bake Peanut Butter Bars are one of my most popular posts ever!  These crazy delicious treats require just a little mixing and a few minutes of chilling to be ready to eat.  If you are a chocolate-peanut-butter fan, these will be an instant classic in your home.

This Orange Juice Smoothie can literally be made in 5 minutes or less.  If you need a quick and cool treat, and you have some frozen orange juice concentrate in your freezer, you can find success with this Orange Julius knock-off.

Biscoff Granola Bars guest post

Biscoff barsIt’s the middle of the month, and I am already over budget on the groceries.  I can’t help myself.  Sometimes I see something fabulous like mini-bell peppers or blood orange Chobani greek yogurt, or heaven help me, Biscoff spread, and I just have to buy it.

Now school is starting, and I have to get to start packing sack lunches, and what is there to pack?  There’s no way the kids will be eating bell peppers, and Robb wants all the Chobani to himself, which means I now have to share my Biscoff spread.  I’m sort of jealous and selfish, and so this idea is not my favorite.

On the other hand, turning a fabulous ingredient like Biscoff spread into something new and delicious and homemade like Biscoff Granola Bars is kind of fun.  Plus, I’m sure the kids will love finding these cute bars in their lunches.

I’ll probably eat mine for breakfast.

Banana Chocolate Chunk Mini Muffins

Chocolate Banana BreadI have this problem.  When I bake stuff, I always want lots of people to tell me how amazing it is.  Because I’m vain.  My family has learned to accommodate me.

When I made these banana muffins, I was pretty proud of myself.  I yelled through the house, “Chow’s on!,”  expecting people to come running, but much to my dismay, they did not appear.  It was kind of a blow to the ego.  So I went looking for them, warm muffins in hand.  Just then, Robb emerged from the garage with greasy hands.  He walked right past me and didn’t even look at my muffins.

Cherry White Chocolate Chip Cookies

Cherry cookiesI’m not a big fan of bribing my children, as a general rule.  I much prefer beating them.  (Calm down, I don’t actually beat my children.)  I think kids should behave just because I ask them to, and not because I begged and bribed them.  It gives the kids the impression that they’re the ones in charge.

And we can’t have that, now, can we?

But, let’s just say it’s a Friday, and the kids are supposed to be doing their Friday chores.  And, let’s just say there were fresh hot cookies coming out of the oven, and the whole house smelled like cookies.  And, as long as we’re at it, let’s say it’s lunch time, and no one has eaten lunch yet.  Then I can use one of my favorite parenting stand-by moves:

Cinnamon Waffle Cookies

Whose idea was it to break my vacuum the same week I got a dog?  Thanks for that, universe.  Good one.

My bedroom has been in a pretty desperate condition, overflowing with useless crap, and dirty clothes, and dust.  I just keep putting new containers on the floor.  My husband has about had it with me and the bedroom mess.  I’d love to tell you that I put it off because my vacuum broke, but honestly, I was putting it off long before that.

Today, I borrowed a vacuum from my neighbor, and tackled the bedroom.  I’m allergic to dust, so I was not really enjoying myself, but I distracted myself from the discomfort with some episodes of What Not to Wear and The Office.

Peanut Butter Bars (No Bake!)

An easy no-bake recipe for peanut butter bars with chocolate frosting.

Some days were made for baking.  When it’s cool outside, and you have lots of un-interrupted time and lots of fresh produce in your fridge, there is nothing better than spending a few hours creating marvelous meals and desserts.  The kitchen gets all warm from the oven, and the house smells like brownies, or apple pie, or pot roast.

I believe in days like that.  I can’t remember the last time I experienced one, but I believe they exist.

More frequently, I find myself with a great desire to bake, but with an empty pantry and a full calendar.  Some day, my life will be calm.  Today, I struggle to put dinner on the table in the twenty minutes we are all together between karate classes and piano lessons and homework.  So today, I am making a treat that requires NO baking, only a FEW ingredients, and can be done QUICKLY.  It’s the perfect weekday treat for a busy family.

I’m going to warn you now, though… DON’T lick the bowl.  Just don’t.

Did you know you can purchase graham cracker crumbs in a box?  Gone are the days of putting crackers in a ziploc bag and smashing them with a rolling pin.  Gone are the days of using the bulky food processor to turn crackers into crumbs.  Welcome the days of buying them already crushed!  It’s a major time saver.  Take your already crushed graham cracker crumbs and mix them with powdered sugar, butter, and peanut butter.  The spread the mixture into a 9×13 pan.

Here’s the thing… if you lick the bowl, I guarantee you will take a spoon to the 9×13, before you even get it frosted.  You’ll be tempted to eat the entire thing yourself, and hide the pan from your kids.

That’s not what happened to me, I’m just saying it could happen. *ahem*

You’ll frost these lovely bars with a combination of chocolate and peanut butter, which is a very lovely frosting indeed.  These will need some time to cool and set up, but 30-60 minutes in the fridge ought to be enough.  And that’s it.  Voila!  You’ll have a fabulous, no-bake, keep-them-coming-back, weekday dessert with only a few minutes of work.

I’ll guarantee you they won’t last into the weekend.

Peanut Butter Bars (No Bake!)
 
Easy no-bake peanut butter bars with chocolate frosting.

Serves: 12 large
Ingredients
BARS:
  • 2 cups graham cracker crumbs
  • 2 cups powdered sugar
  • 1 cup butter
  • 1 cup peanut butter
FROSTING:
  • 1½ cups chocolate chips
  • ¼ cup peanut butter
Instructions
  1. In a bowl, melt butter and peanut butter together. Add cracker crumbs and sugar. Stir to combine.
  2. Spread mixture evenly into a 9x13 pan.
  3. Melt chocolate chips with peanut butter in the microwave in 30 second intervals, stirring between each, until melted and smooth.
  4. Pour chocolate mixture over bars, and frost evenly.
  5. Chill for 40-50 minutes, until chocolate is set.

It’s funny, how we make decisions sometimes.  I was wandering through the blogosphere, looking for fun cookies and other recipes to try when I found a picture of these marshmallows dipped in chocolate.  They reminded me of a local candy company that sells amazing candied apples.  I’m not a big fan of caramel apples, myself, so I was much more impressed by the one tray of candy marshmallows in their window.  They look a lot like the apples, just not quite so round.  The next day, I found marshmallows on clearance at the grocery store, and in that moment, the decision was made.

Chocolate Waffle Iron Cookies

A very quick recipe for a chocolate cookie baked in a waffle iron.

Yield: about 30-40 little blobs

My son is required to take this class at school which takes them through several practical vocational studies, including computers and bookkeeping, wood and metal shop, and cooking and sewing.  Surprisingly to me, he liked computers the least.  He really enjoys cooking and baking, and was very excited the day he brought home this recipe.  He made them for the family, and they disappeared in less than 30 minutes.  This is when I knew I needed to try it myself.

I have rarely come across a cookie that was easier or faster to make.  Even the stove-top no-bake cookies need time to cool.  These can be eaten in less than 10 minutes from the moment you decide to make them.  I’ll admit, they are not fancy, they don’t look cute on a nice platter.  They look like little blobs of dough that have been in a waffle iron… because that is exactly what they are.  However, when you have a house full of junior high age boys after school, and they need a snack, these are the perfect solution.
