Triple Chocolate Chunk Oreo Cookies

A recipe for a chocolate cookie with chunks of semi-sweet chocolate, white chocolate, and Oreo cookies.

Triple Chocolate Chunk Cookies from JensFavoriteCookies.com - a chocolate lovers dream come true!I normally try not to make chocolate cookies twice in a row.  Don’t get me wrong, I’m a confessed chocoholic and would be happy to make all my cookies super chocolatey.  I guess I also believe in moderation and variety and making my family members happy and crap like that too.  I’m not always happy about it, but I cut the chocolate with other stuff.

But not today.  I’ve been wanting to make Maria’s Triple Chocolate cookies for some time now, and this week my patience ran out.

When I was a teenager I had a job at a malt shop.  We had dozens of different flavors of shakes, and making these shakes was the bulk of my job.  My favorite was one called “Chocolate Lovers.”  It involved chocolate ice cream mixed with chocolate syrup, chocolate chips and Oreo cookies.  I found that most people thought the flavor was too rich, too chocolatey.  I thought they were nuts!  I’ve never found anything to be too chocolatey.  I ate this shake regularly, back when I had the metabolism to handle it.  Trolling through TP&TP and coming across this particular cookie took me right back to that malt shop, and that particularly rich shake.

Triple Chocolate Chunk Cookies from JensFavoriteCookies.com - a chocolate lovers dream come true!I should start by telling you that I did have one little problem with this cookie.  It calls for dutch process cocoa.  I really have nothing against dutch process or dark cocoa (in fact I looooooove these Salted Dark Chocolate Cookies!) but this one just felt better with regular old cocoa powder to me.

The big surprise (well, not that big a surprise, when you think about it!) was how amazing the dough tasted.  It is literally one of the best doughs I have ever eaten, and that is saying a lot.  Have you tried the Soft Sugar Cookie dough yet?  It’s one of the few that can compete.  I was really tempted to just get a spoon and eat the dough, and skip the baking altogether.  I had visions of chilled dough mixed into my ice cream.

Another bonus about this recipe is what a big batch it makes. I made them for my niece for her birthday, (I just can’t say no to a girl who wants chocolate-chocolate-chocolate cookies!) and I was so happy that after I stuffed her cookie box as full as I could get it, there were still lots of cookies left. It’s a good day when there are LEFTOVER triple chocolate cookies.

These cookies look and taste super yummy.  They store really easily, too. And if you don’t have a niece to share them with, you might be lucky enough to keep the whole batch to yourself!

 

Triple Chocolate Chunk Oreo Cookies

A super chocolatey cookie with big chunks of chocolate and Oreos.
Serves: 5 dozen
Ingredients
  • 1 cup softened butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • ¼ tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • ½ cup + 2 T. unsweetened cocoa
  • 2½ cups flour
  • 1 cup semi-sweet chocolate chunks or chips
  • 1 cup white chocolate chunks
  • 1 cup Oreo cookies, cut into chunks
Instructions
  1. Cream butter and sugars. Add eggs and vanilla.
  2. Sift together dry ingredients, and add to the mixture, mixing only until incorporated.
  3. Add in chocolate, white chocolate, and cookie pieces, and mix gently.
  4. Bake at 375 degrees for 8-10 minutes.
  5. Allow to sit on baking sheet for 2-4 minutes, then remove to a cooling rack.
  6. Store in an airtight container.

And suddenly, I was craving chocolate.  CRAVING.  The kind of craving that takes over your life and commandeers all your thoughts.

I went in a frantic search through my pantry for chocolate, and found a couple items in the chocolate chip box.  Items like this chocolate bar and this white chocolate bar.  And a half a bag of white chocolate chips.  And a bag and a half of semi-sweet chocolate chips.

And since I had to run to the store for something else anyway, I grabbed a package of Oreos to complete my black and white theme.

I love how quick and easy it is to make chocolate bark.  I mean, melt, spread, chill, cut.  Easy as pie.

And where did that saying come from anyway?  This is WAAAAAAY easier than pie.  No contest.

The best part of this process has got to be making all the pretty little swirls.  I love that part.  Mostly because I am no good at making anything pretty, but this stuff is eeeeeeeasy.

I almost said easy as pie again.  But forget that.  This is easy like Sunday morning.

Black and White Bark
 
A simple chocolate candy.
Author:
Recipe type: Candy
Serves: about 20 pieces
Ingredients
  • 4 oz. good quality chocolate
  • 4 oz. good quality white chocolate
  • 4-5 Oreo cookies, cut into quarters
  • a small handful each of chocolate chips and white chocolate chips
Instructions
  1. Break chocolate into pieces and place in a microwave safe dish. Melt in the microwave, in 30-second intervals, stirring between each, until completely melted and smooth.
  2. Spread chocolate on a baking sheet lined with parchment paper.
  3. Break white chocolate into pieces and place in a microwave safe dish. Melt in the microwave, in 30-second intervals, stirring between each, until completely melted and smooth.
  4. Drop spoonfuls of melted white chocolate in dollops onto spread chocolate. Use a toothpick (or I used a skewer) to swirl the chocolate and white chocolate together into pretty patterns.
  5. Place Oreo pieces evenly on the swirled chocolate, and sprinkles any crumbs on top. Sprinkle chocolate chips and white chocolate chips on top.
  6. Chill in the freezer for 15-20 minutes, until set. Use a large knife to cut into pieces. Store in fridge or freezer.

I chose grey and mauve.  What can I say, it was the 80’s.

I loved my pink and grey room.  I felt so cool in my little basement home, with the grey carpet and the pink curtains, and the pink and grey comforter on the bed.

These cookies remind me of those days.  The pink cookie with black Oreos has a very 80’s feel.  It’s okay though… the 80’s are in again.  Everything but the hair, that is.

Let’s hope that hair never comes back in style.  Some things are best forgotten.

Oreo Popcorn

Oreo Popcorn recipe;  This white chocolate popcorn has chunks of Oreo cookies in it.  Simple and delicious popcorn recipe.

popcorn-recipeEven with the 100-ish cookie recipes on this site, good old-fashioned packaged Oreos are still Robb’s favorite.

He has rules for his Oreos, too.  No double stuffed, no flavored, and certainly no Golden Oreos.  The only acceptable variety is the plain, regular, original kind.

I don’t really blame him, Oreos are fantastic, although we differ on the details.  I think the different flavors are all wonderful, (variety is the spice of life, and all that) although I kind of agree about the Golden Oreos.  I can’t bring myself to spend money on them.

No matter.  I can compromise with the best of them.  I bought a package of plain original Oreos, and used half the package on this yummy Oreo White Chocolate Popcorn, and left the other half of the package for Robb to eat plain.

It’s a win-win.

The Hippie Chick absolutely adores white chocolate, especially when it’s mixed with Oreos.  She actually prefers white chocolate to regular chocolate, leading me to believe she was switched at birth.

Although, to be fair, I had a hard time keeping my hands out of this popcorn, too.  I really have a weakness for white chocolate popcorn.

You know what else?  Those pretzels covered in white chocolate.  Lawd have mercy, that stuff is like crack.

Let me dive in here with some details.  First, for a recipe like this, I really prefer the almond bark or candy melts.  They melt nicely, and set up well with a few minutes in the fridge.  White chocolate chips get all wonky and gross when you melt them, so please don’t use that.  Regular old white chocolate like this stuff is fine, too, although in my experience the candy coating sets up a little better.

And about the popcorn… I used an air popper {I’m sort of racist against microwave popcorn.} but use whatever method you prefer.  You’ll probably be happiest with the plain white unflavored variety, but if you happen to have only buttered microwave popcorn in your pantry, don’t let that stop you.  I used 1/2 cup of unpopped kernels, and I’m guessing here, but I think that’s pretty close to two regular microwave bags.

I used about a sleeve and a half of the regular Oreos, but next time I’m totally trying this with Mint Oreos.

Robb can just suffer.

Funfetti Oreo Stacks

Funfetti Oreo Stacks; Funfetti cake layered with Oreo cookies, frosting, and sprinkles.  A great funfetti recipe for birthdays!

funfettiWhoever came up with the word “funfetti” was brilliant, because everyone knows sprinkles are more fun.

Since the neighbor and long time friend of the Hippie Chick was having a birthday, we wanted to celebrate with something, well… fun.  And, obviously it’s more fun if it has the word “fun” in it.

Or if it has Oreos.

And so I used both.

Truth be told, I’m not completely prepared for the upcoming birthday season at our house.  It begins in May and lasts until October.  It’s intense, it’s expensive, and it means my kids are getting old.

I keep thinking, if I plan early, if I prepare ahead of time with birthday cake recipes and party ideas, maybe the emotional blow my childrens’ birthdays are becoming to me will be easier to handle.

It probably won’t work.  But it’s all I’ve got.

So, the Hippie Chick and I were having a conversation about this.

Me: Bean’s birthday is tomorrow.  Should we get her a gift?
Hippie Chick: Yes!
Me:  What should we get her?
HC: I don’t know.  I can’t think of anything good.
Me: Maybe we should bake her a treat?
HC: Yes!  Great idea!  Let’s make something vanilla.  Everyone likes vanilla.

I literally cannot break her of this belief.  Lord knows I’ve tried.

The process is amazingly simple.  Get yourself a Funfetti box cake mix, and make it according to the package directions, except pour it into a sheet pan to bake, so you get this thin sheet cake with cute sprinkles.  Use a round cookie cutter to cut little circles from the cake, then layer them between Oreos with frosting.

Top with sprinkles.  Devour.  Repeat.

Grasshopper Cookies

Take this recent example.  The Hippie Chick was struggling through her math, the same concept she has been taught over and over and over, and her brothers were trying to help her.  It wasn’t going too well, so Robb chimed in with some questions to get them thinking in the right direction.

“How many feet are in a yard?”
Silence.  “Thirteen?”
“Are you serious?”

Let’s move on.  “How much is in a gross?”
“Eight.”
“What?  You’ve obviously never bought fireworks.”  (Robb is from Wyoming.  Does it show?)

At this point it was becoming a game.  “How long is a fortnight?”
“Six.”
“Six what?”
“24 hours.”
“Not even close.”

“How much is two bits?”
“A dollar.”
*sigh* (followed by long conversation about the answers to all these questions.)

Later on, Robb looked up the history of “two bits,” which was actually pretty interesting, and which I’m sure the Fruitarian would have loved, had he not tired of the conversation long before.  It’s all about pieces of eight, which you’ll know all about it you’ve ever watched the Pirates of the Caribbean movies.  A piece of eight was like a silver dollar, and people frequently chopped them into eight pie-slice pieces, called bits, to have small change.  So two bits was basically a quarter dollar.

Learn something new every day.

Grasshopper recipes

Not that pirate coins or fortnights or even learning something new has anything to do with Grasshopper Cookies.  The Lizard is reading this over my shoulder as I write, and telling me so.

Umm, thanks dude.  I know.

There’s just only so much you can say about cookies, isn’t there?  I mean, it’s soft, it’s minty, it’s got chopped chocolate mint cookies in it, the entire batch disappeared in less than 24 hours… it’s basically the same old story.  The same old wonderful, delicious story.

With mint.

But I’m thrilled to see that he is picking up on some basic writing elements.  Perhaps there is hope for the future after all.

Cookies & Cream Pudding Cookies

Oreo Pudding Cookies - JensFavoriteCookies.com There’s something weird about cookies with cookies in them.

Only when you think about, though.  When you taste the cookies with cookies in them, it doesn’t seem weird at all.

Why did I never think of this as a kid?  Putting cookies in the cookies… it’s brilliant!  My friends and I used to make cookies all the time, but we always made boring things like chocolate chip or oatmeal chocolate chip or chocolate chip with peanut butter chip.

We were super creative.

I had one friend that didn’t really like baking the cookies, just mixing them up.  Fortunately, her mom liked baking them but didn’t like mixing them up.  It was a match made in heaven.  We would mix up some cookie dough, head to the basement for an episode of Days of Our Lives, and the head back upstairs for warm cookies.

My kids and their friends needed both entertainment and sustenance, and as cookies are all the rage at our house, that’s how they spent their evening.  We had a box of Oreo Cookies & Cream instant pudding mix in the pantry, and 4 Oreos left in the package I was trying to save.  (as if)  Throw in some chocolate chips, and you’ve got yourself some fantastic cookies, my friends.

After I left the house, my kids discovered that the box of baking soda was gone.  They solved the problem by walking around the neighborhood, begging for baking soda.  The first four houses they went to were empty.

Either that, or the homeowners looked out the window, saw it was my kids at the door, and decided to pretend they were gone.

Don’t worry, neighbors.  I’m not judging.  I may have done the same thing myself.

After I heard this story, I walked to the pantry and pulled out not one, but two full boxes of baking soda.  It was rather a distressing moment for the kids.  I, for one, am glad they went wandering around the neighborhood in the freezing cold, because seriously?!  These cookies are so awesome.

Awe.  Some.

The texture?  Perfect.  A touch crispy, but still soft, perfect for dunking.  The taste?  Amazing.  The chocolate chips?  Just the right addition in just the right amount.  The size?  Far, far too small. Next time, I’m doubling the size of these.  Maybe that way I’ll eat half as many.

Cookies & Cream Pudding Cookies

A very easy cookie made with cookies & cream instant pudding mix.
Recipe type: cookies
Serves: 3 dozen
Ingredients
  • ¾ cup butter, softened
  • ¾ cup brown sugar
  • ¼ cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 (3 oz) box cookies & cream instant pudding mix
  • 1 tsp. baking soda
  • 2¼ cup flour
  • 1 cup chocolate chips
Instructions
  1. Cream butter and sugars together. Add eggs, vanilla, and pudding mix and mix well.
  2. Add baking soda and flour, and mix until combined.
  3. Add chocolate chips and mix just until incorporated.
  4. Drop by spoonfuls onto a baking sheet and bake at 350 degrees for 8-10 minutes.

It’s summer, which means we have shed the daily routine of breakfast and school and homework in favor of a new routine.  It goes like this:  everyday, my children say, “Can I have a friend sleep over?” and I reply, “Did you practice the piano?  Clean your room?  Pick up your dirty socks?”  and they reply with that sound of complete frustration that is impossible to convey through the written word.  My hope that they will actually do these things without a breakout of world war three is dying quickly.

But, world war three led to a sleepover, which led to a desperate need for Chex Muddy Buddies, which led to this sage motherly advice:  “Read. The. Directions.”

Oreo

A super-easy and quick recipe for homemade Oreos, with customizable frosting to suit your taste.

Source: as with so many of my best recipes, this one came from my Grandmother.

Yield: about 4 dozen unfrosted, or 2 dozen small sandwiched cookies.

What a dilemma I found myself in this week. After my last post,Peanut Butter Sandwich cookies, I was left with a fair amount of peanut butter frosting in my fridge. What to do? What to do? I just couldn’t bring myself to let all that sweet, peanuty loveliness go to waste. The solution? Oreos, of course!!
