Banana Chocolate Chunk Mini Muffins

A soft banana muffin with chunks of dark chocolate.

  • ½ cup butter, softened
  • 3 very ripe bananas
  • ½ cup brown sugar
  • 2 eggs
  • ½ tsp. salt
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • ¾ cup quick oats
  • 1½ cups flour
  • 4 oz. bittersweet chocolate, roughly chopped
  1. Combine butter and bananas, and mash the bananas with a fork.
  2. Add brown sugar and eggs, and mix well.
  3. Add salt, soda, baking powder, oats, and flour, and mix until well combined.
  4. Fold in chocolate chunks, mixing until evenly distributed.
  5. Fill mini-muffin cups ⅔ full. Bake at 350 degrees for 9-12 minutes.
If you prefer a regular size muffin, you can use the same temperature, but increase the baking time to around 18-22 minutes, until the edges are a little brown.
