A recipe for a chocolate mint rice krispie treat made with Girl Scout thin mint cookies.

Serves: 12-20 pieces
  • ½ cup butter
  • 1 cup brown sugar
  • ½ cup light corn syrup
  • 1 can sweetened condensed milk
  • ½ pkg. mini marshmallows
  • 1 box of Cocoa Pebbles (about 7 cups)
  • 1 pkg. Andes creme de menthe baking chips
  • 1 sleeve Thin Mint cookies (about 16 cookies), coarsely chopped
  1. In pot, combine butter, brown sugar, and corn syrup. Bring to a boil and boil for exactly 2 minutes.
  2. Remove from heat and add milk and marshmallows and stir until marshmallows are melted.
  3. Meanwhile, in a large bowl, place Cocoa Pebbles, chopped cookies, and about half a package of baking chips.
  4. Pour melted mixture over cereal mixture, and stir to combine.
  5. Pour into a buttered 9x13 pan. Top with remaining baking chips, and press in. Chill for 1-2 hours in the fridge before serving.
