Peanut Butter Crispy Marshmallow Brownies

A fudgy chocolate brownie, topped with marshmallows and a crispy peanut butter topping.

Ingredients
  • ½ cup butter
  • 4 oz. chocolate
  • 2 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla
  • dash salt
  • ½ teaspoon baking soda
  • 1 cup flour
  • 25 large marshmallows
  • 1 cup chocolate chips
  • ½ cup peanut butter
  • ¾ cup crisp rice cereal
Instructions
  1. Chop chocolate, and place in a bowl with butter. Microwave in 30-second intervals, stirring between each, until melted and smooth.
  2. Let cool slightly, then add eggs, sugar and vanilla. Mix well.
  3. Add salt, soda, and flour, and mix well.
  4. Pour batter into a 9x9 pan, and bake at 350F for 25-30 minutes. Remove from oven, place marshmallows evenly on top (I did a 5x5 grid) and return to oven. Bake an additional 7-8 minutes, until marshmallows are puffy and slightly browned.
  5. Let brownies cool completely.
  6. In a small bowl, place chocolate chips and peanut butter. Microwave in 30-second intervals, stirring between each, until completely melted. Add crisp rice cereal, and stir well. Pour over cooled brownies. Place in fridge and chill until topping is hardened.
  7. Cut into 9 large or 16 small squares.
