Red Velvet Sandwich Heart Cookies

A heart-shaped red velvet cookie sandwiched with chocolate frosting.
Recipe type: Cookies
  • 1 box red velvet cake mix
  • ½ cup butter, melted
  • 2 eggs
  • 2-3 T. powdered sugar
  • 2 T. butter, softened
  • 2 T. milk
  • 3 T. cocoa powder
  • 1 - 1½ cups powdered sugar
  1. Combine cake mix, melted butter, and eggs, mixing well.
  2. Press dough into a jelly roll pan (half sheet pan), sprinkle with powdered sugar, and bake for 25-30 minutes, until cooked through. Let cool completely.
  3. Use a heart shaped cookie cutter to cut out hearts.
  4. For frosting, combine all ingredients, mixing until smooth. Add more powdered sugar or more milk to reach desired consistency.
  5. Frost the bottom side of one heart, and sandwich it with a second heart. (These can also be served frosted and not sandwiched.)
