A slightly crispy almond cookie sandwiched with plum jelly and dusted with powdered sugar.

Serves: 1-2 dozen
  • 1 cup butter, softened
  • ½ cup brown sugar
  • 1 egg
  • ½ tsp. salt
  • ½ tsp. baking powder
  • ½ tsp. cinnamon
  • 1¼ cups ground almonds (*see notes)
  • 2 cups flour
  • powdered sugar
  • plum jelly
  1. Cream butter and sugar. Add eggs and mix well.
  2. Add salt, baking powder, and cinnamon, and mix well. Add ground almonds and mix well. Add flour and mix until combined.
  3. Shape dough into two separate discs and wrap tightly with plastic. Chill for 2-3 hours, until firm.
  4. Roll dough to ⅛" thickness. (*see notes) Cut circles. Use a smaller cutter to cut out centers of half of the circles. Place on a baking sheet.
  5. Bake at 350F for 10-12 minutes. Remove from baking sheet and immediately dust those with centers cut out with powdered sugar.
  6. Place a small amount of plum jelly on each round cookie. Place a cookie with a center cut out on top.
You can use a food processor or high speed blender to turn whole or sliced almonds into ground almonds. I used one 5 oz. bag of sliced almonds, and it gave me almost exactly 1¼ cups.

Because the dough can be a touch crumbly, it is best to roll dough between layers of wax paper, rather than on a floured countertop. Work quickly to avoid dough becoming too sticky.

I used a 2.5" cutter for the large circles, and a 1.5" cutter for the centers.
