Chocolate Pudding (egg-free)
A simple egg-free homemade chocolate pudding.

  • 4 cups milk
  • 1½ cups sugar
  • 3 T. cocoa powder
  • 7 T. cornstarch
  • 1 tsp. vanilla
  • whipped cream (optional)
  1. In a heavy saucepan, heat milk to warm, not boiling.
  2. Meanwhile, place sugar, cocoa, and cornstarch in a small bowl, and mix.
  3. Scoop about 1 cup of the warm milk into the bowl with the chocolate mixture. Stir.
  4. Pour chocolate mixture back into the saucepan with the remaining milk, slowly, stirring as you do.
  5. Heat over medium high heat, stirring frequently, until mixture starts to boil and thicken. Remove from heat and add vanilla.
  6. Pour pudding into individual dishes, or one large bowl. Cover with plastic wrap. Chill at least 2 hours to cool. Garnish with whipped cream, if desired.
This pudding will form a skin in the fridge. To avoid this, I cover with plastic wrap so that the plastic actually touches the pudding as much as possible, essentially creating a plastic skin that will be removed before eating.
