Molasses Cookies with Caramel Cinnamon Glaze

A crunchy molasses cookie topped with cinnamon caramel glaze.

Serves: 2 dozen
  • ½ cup butter
  • ½ cup brown sugar
  • 1 egg
  • ½ cup molasses
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • ½ tsp. baking soda
  • ¼ tsp. baking powder
  • 2¾ cups flour
  • 1 cup cinnamon chips
  • 20 light caramels
  • 6 T. milk
  1. Cream butter and sugar. Add eggs and molasses and mix well.
  2. Add salt, cinnamon, soda, and baking powder, and mix well.
  3. Add flour, and mix until combined.
  4. Wrap dough tightly in plastic wrap and chill 1-2 hours.
  5. Roll dough to ¼-inch thickness. Use cookie cutters to cut shapes. Place on baking sheet, and bake at 350 degrees for 14-15 minutes.
  6. Meanwhile, unwrap caramels and place in a saucepan. Add milk and cinnamon chips, and cook and stir over medium heat until completely melted and smooth.
  7. Dip baked and cooled cookies into glaze.
