I’ve wanted to make these cute peppermint cookies for some time now. I bet these would be fantastic with a cup of dark chocolate cocoa. I love the peppermint hot chocolate at Starbucks, by the way, speaking of peppermint and chocolate and things I love.

Let’s not forget that it is now November. I have no idea where this year went, and I can’t decide whether I’m happy or sad to have it behind me. But that is beside the point. The point is, it’s fall, and I needed some fall flavors in these bars.
Have you ever made cookies in the waffle iron? Granted, you can only make 4 cookies at a time, but they cook quickly, and you don’t have to heat up your oven. And the kids think it’s such a novelty to eat cookies that look like waffles. What can I say? I aim to please.

The Lizard finally settled on Chocolate Peanut Butter Cake for his birthday, which is just fine with me. My family’s love of chocolate and peanut butter is practically legend. As if chocolate peanut butter cake and peanut butter frosting weren’t enough, I covered the top with chocolate ganache and threw some chopped peanut butter cups on top.
And, being teenage boys that are constantly hungry, the kids decided to kill two birds with one stone. They would spend time in the kitchen baking treats. And then they would eat them. I threw them a bag of strawberry flavored marshmallows and a box of Rice Krispies, and put them to work. Having older kids is sooo great.
Since the neighbor and long time friend of the Hippie Chick was having a birthday, we wanted to celebrate with something, well… fun. And, obviously it’s more fun if it has the word “fun” in it. Or if it has Oreos. And so I used both.
