I remember one year when I was a kid, my parents took advantage of a deal at a local pizza joint. I don’t remember the deal exactly, but I do remember that it involved a pitcher of root beer. The upshot is, we had pizza and root beer about once a month that year.
I also had two teenage brothers with the appetites of ravenous wolves, and thus the following family-pizza-dinner rule was born: You may only have 2 slices of pizza on your plate at any given time.
My brothers took this rule right to the edge. They would immediately grab the three largest slices they could see, and put two on their plates, and one in their hands. Then they would continue grabbing slices directly from the box until they were full enough to finish off those last two large slices on their plates.
My mom rolled her eyes a lot, but what could she do? She made the rule.
I remember another time, when we were a bit younger, when my mom introduced my brother and I to the fluffernutter sandwich. My mom now claims that no such thing ever happened, since she was loathe to keep anything so overly-sweet and overly-processed as marshmallow fluff in the house, but I remember it clearly. It probably only happened once.
Bro is peanut butter addict, to the point that we are considering staging an intervention. He may need a 12-step program. I’m not sure whether he appreciated the addition of marshmallow to his peanut butter sandwich or not, but I certainly cannot imagine him disliking it. Personally, I found the peanut butter + marshmallow fluff combination to be quite heavenly.
Yes, I enjoy marshmallow fluff. I also put more than a cup of sugar in my kool-aid. Because I kinda have a sweet tooth.
Don’t worry, these cookies don’t taste overly sweet. They taste quite peanut-buttery, mostly, but the swirl of marshmallow fluff breaks up the peanut butter a bit. I also threw some chocolate in this, just for fun. Because what doesn’t taste better with chocolate?
By the way, I put the yield at 3 dozen here, but it could potentially be a few more than that… if you never taste the dough.
- ½ cup butter, softened
- ½ cup brown sugar
- ½ cup sugar
- 1 cup peanut butter
- 1 egg
- 1 tsp. vanilla
- ½ tsp. salt
- ½ tsp. baking soda
- 1⅓ cup flour
- 2 oz. chopped dark chocolate
- 3-4 oz. marshmallow fluff
- Cream together butter, sugars, and peanut butter.
- Add egg, vanilla, salt, and soda, and mix well.
- Add flour, and mix just until combined.
- Gently mix in chocolate pieces.
- Fold in marshmallow fluff, stirring just enough to see swirls in the dough.
- Drop large spoonfuls onto a baking sheet, and bake at 350 degrees for 9-11 minutes. Let cookies sit on the baking sheet for an additional 3-4 minutes before removing.
