I seriously love summer. It doesn’t make much sense, because I prefer not to be seen in a swimsuit, and I am way more comfortable wearing a sweater or jacket over my blouse, and shaving my legs is way down my list of priorities.
But, I love the sun. I love the way it feels, I love the light, and I love the heat.
Well, I love air conditioning. And, I love heat in small doses.
As long as I am loving things, I also love berries. Lovely, juicy, fresh berries. My favorite is blackberries, but I’ll take strawberries, raspberries, blueberries, whatever. You can bake with them, or eat them plain, or top your dessert with them. Berries are the new black, they go with everything. Summer is berry season, and yes, I do have fresh berries in my fridge today. Strawberries and blackberries, if you must know.
And so… I am baking with Nutella.
I’m sure I’ll be back on the berry bandwagon next week, but first and foremost, I am a chocolate girl. Chocolate cookies, chocolate cake, double fudge brownies, and hot fudge sauce, chocolate ice cream and candies and frosting. Chocolate with nuts, chocolate with marshmallows, chocolate with crisp rice cereal, and yes… chocolate with berries. I love it all.
I know it’s about the fiftieth time I have used the word “love” in this post, but is there another word for it?
So picture this: you start with a super simple crust made from Oreo cookies and butter. You top that with a cheesecake-like substance made from a mixture of cream cheese, Nutella, and Cool Whip. You garnish with some more Cool Whip and another Oreo. You refrigerate instead of baking. You come home from church to find a perfectly chilled and cute-as-a-button little Nutella cheesecake waiting for you. It’s a perfect Sunday afternoon moment.
I will freely admit that making food look all beautiful and cookbook ready is not my forte. I like it messy and blobby and full of love.
Yes, I realize that I just insinuated that food that looks great is not full of love. I basically did that to make myself feel better. I’m sure your food is all perfect and magazine-ready. But, if it’s not… don’t worry. It will still taste like chocolate!!
- 11-12 Oreo cookies, crushed
- 3 T. butter, melted
- 8 oz. cream cheese, softened
- ⅔ cup Nutella
- 1 tsp. vanilla
- 8 oz. frozen whipped topping, thawed
- Mix together butter and cookie crumbs. Press into 4-6 single serving dishes to form a crust.
- In a bowl, mix together cream cheese and Nutella. (An electric mixer is useful, but a wooden spoon will work well too.) Add vanilla and mix well.
- Fold in whipped topping, stirring until all streaks are gone.
- Top crust with cheesecake filling.
- If desired, place more whipped topping or whipped cream on top. Chill for 20-30 minutes before eating.
