A very quick recipe for a chocolate cookie baked in a waffle iron.

My son is required to take this class at school which takes them through several practical vocational studies, including computers and bookkeeping, wood and metal shop, and cooking and sewing. Surprisingly to me, he liked computers the least. He really enjoys cooking and baking, and was very excited the day he brought home this recipe. He made them for the family, and they disappeared in less than 30 minutes. This is when I knew I needed to try it myself.
I have rarely come across a cookie that was easier or faster to make. Even the stove-top no-bake cookies need time to cool. These can be eaten in less than 10 minutes from the moment you decide to make them. I’ll admit, they are not fancy, they don’t look cute on a nice platter. They look like little blobs of dough that have been in a waffle iron… because that is exactly what they are. However, when you have a house full of junior high age boys after school, and they need a snack, these are the perfect solution.
You can melt the butter and chocolate together on the stove, or if you’re lazy like me, in the microwave. Also, I should mention that when I ran out of unsweetened chocolate, but still had a cupboard full of semi-sweet squares, I used those instead, and it turned out fine.
Add the sugar and eggs to the chocolate mixture. Stir in vanilla and flour. This should make a rather heavy dough.
Drop little blobs onto your hot waffle iron and cook them for 1-2 minutes. (My son’s recipe called for 1 minute, but I didn’t think it was quite enough. I did it for 1 min 30 sec, but I suppose it would depend on your waffle iron.)
Just pull them out with a fork, and let them cool a couple minutes before frosting. Now normally, I am very big on making my own frosting. However, since the entire point of this cookie is speed, I’ve been opting for frosting in a can. These are not going to look pretty no matter what you do, so I put a spoon in the can of frosting, and let the kids smear a spoonful onto their cookies before they eat them.
I personally find that a warm cookie with a smear of cold frosting is a match made in heaven!
- ½ cup butter
- 2 squares unsweetened baking chocolate
- 2 eggs
- ¾ cup sugar
- 2 cups flour
- 1 tsp. vanilla
- Melt butter and chocolate together on the stove or in the microwave.
- Add eggs and sugar and mix well.
- Add vanilla and flour, and mix.
- Drop by spoonfuls onto a hot waffle iron, close and cook for 1-2 minutes.
- Remove with a fork, and top with frosting.
